another one I have to make in triple batches is

Reeses Cup Tarts

1 3/4 c flour
1/2 tsp salt
1 tsp baking soda
1/2 c butter, softened
1/2 c sugar
1/2 c peanut butter
1/2 c packed brown sugar
1 egg, beaten
1 tsp vanilla extract
2 Tbs milk
40 mini reeses cups, unwrapped then frozen

Preheat oven to 375.
Sift together the flour, salt and baking soda.

Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture,mix well.

Shape into 40 balls and place each into an ungreased mini muffin pan.

Bake 8 min. Remove from oven and immediately press a frozen mini peanut butter cup into each ball. Cool and carefully remove from pan.

Thats the basic recipe and heres what I do....1-rolling into balls really isnt necessary just put a Good heaping tsp into each cup and make sure its pressed somewhat into the bottom. and 2 I let them cool a couple min on the counter then pop in the reeses cup...then I pop them in the fridge to cool.....that was the pb cups dont get too melty.

and I usually get about 30-35 with this recipe

Pecan Tarts....a cookie tray classic(at our house anyway...these are so good about 3 min out of the oven while still warm...OMG ... )


1/2 c butter, softened
1 (3oz)cream cheese, softened
1 c flour
1 egg
3/4 c packed brown sugar
1 Tbs margarine, melted
1/2 c chopped pecans


Preheat the oven to 325.

Beat softened butter +cream cheese til thoroughly combined. Stir in flour.

Using ungreased mni muffin cups, press a rounded teaspoon of pastry evenly into the bottom and up the sides of each cup.

Filling:
Beat the egg and mix in the brown sugar,melted butter,and chopped nuts.

Fill each pastry-lined muffin cup with about 1 heaping tsp of pecan filling.

Bake about 30 min,til pastry is golden and filling is puffed.
Cool slightly in the muffin cups, then remove and cool completely on a wire rack.

not really cookies, but yummy for sure..

White Chocolate Oreo Drops
1 block cream cheese
1 pkg oreo's


In food processer puree' oreo's. then cut in the cream cheese. Using a mellon baller scoop them onto your serving plater (I put in mini cupcake papers) Melt and drizzle white chocolate over top..


White Chocolate Bark

Melt white chocolate blocks in microwave, gently add one of the following:

lemon drops (smashed)
peppermint sticks (smashed)
almonds

pour onto cookie sheet refrigerate until firm. Gently break into chunks. If giving away place several of same kind into a square of seran wrap, tie with ribbon.

My all time fave is Magic Cookie Bars from the Eagle Condensed Milk recipe.

My great aunt who passed away in '05 had a great cookie - the dough was cream cheese, butter, and flour - and then you stick a preserve of your choice (apricot or prune usually) on it and fold it. Last year I finally found the recipe on the internet and made it - so, so good!

I love Peanut Butter Blossoms! Definitely my favorite--especially when they're still a little warm and the Hershey Kiss is melty--Yummm!

JessicaM........my Mom makes pb blossoms every xmas too......they are a really pretty cookie too!!!All of the kids and grandkids grew up getting to put the kisses on

M2M--My niece asked me yesterday when we were going to make cookies because she wanted to help unwrap the kisses and put them on the cookies, and I remember doing it for my aunt when I was a kid, too! And we use the same recipe and make it in a mini muffin pan w/ Reese's cups like your Reese's tarts, too.
