Default Anyone have cheesecake tips to share?

Do you have any cheesecake tips you would like to share?
My hubby loves cheesecake and would like me to make it for his birthday. Last year I bought him a frozen cheesecake from Sams. I can make yummy cookies, cakes & pies but I just haven't had much cheesecake practice.

What kind are you looking to make?Plain or are ya wanting to get fancy?

Cheesecakes can be intimidating cause of the price that goes into one..but they really arent that hard to make.

Plain jane! My hubby likes a plain NY style cheesecake. I was planning on trying one submitted by araefinn called Northwest Cheesecake Supreme.

I made cheesecake for Thanksgiving last year and it was a disaster. They ate it and said it was good but it looked terrible. It was overcooked, dry, cracked and brittle. It came apart in chunks. Nothing like being your own worst critic!

I am so glad that you are going to try my recipe. It is soo good. And really, quite easy. I found some tips for you that may help. FYI-My cheesecake use to always crack when I baked it-we use to call it Grand Canyon cheesecake because the crack was pretty big. I didnt make too much of a fuss since it still tasted so good. I have used these tips and since have not had any problems. Good Luck!

one thing I do...ESPECIALLY THIS TIME OF YEAR.......even in areafins tip post...it mentions NOT letting it cool too fast......do NOT take it out of the oven.....just open your oven door about 12 inches or more and let it start to cool that way...I do that 30 min THEN take it out.

This helps it to A-set up a little more in the middle before moving and B-lets it cool slower preventing some "cool off cracking".

Definately keep us posted on how it turns out!

after you take it out of the oven make sure and let it cool completely before you put it in the fridge or it will go soggy and crumbly. and when baking it, cut the time back by 2 minutes and that will help to prevent cracking, cracking is caused by over baking.
