After being with nonstop family for the last week, we're done with appetizers and holiday food! I need veggies and quick!

Tonight I'm making Chicken Cattiatore in the crockpot and tomorrow I'm going to roast a whole chicken with cornbread stuffing and roasted garlic mashed potatoes. Then I can use the leftover roast chicken to make stock and tortilla soup later in the week.

We still have leftover ham and rolls to make sandwiches for lunches. We really aren't hungry after all the munching we have been doing! All I really feel like is lots of salad, good for the New Year diet

Dh is gone working tonight and I am sick as dog, so I did not feel lilke cooking. I made the kids a frozen pizza with carrot sticks and ranch. The little guy had a small sliver of pizza plus I made him a packet of the microwavable hamburger helper. I can not even think of what to make for tomorrow. I do have two small casseroles in the freezer that I just made last night, but I am saving those for when I work late and dh will cook those up for him and the boys. Whatever I make, it will be something quick and simple.

For NYE we made Fondue cooking steak and Chicken. It was really good I think we will do it again. we also had cheese fondue, shrimp cocktail, cheese and crackers, pepperoni, kielbasa (homemade) veggies and dip, bread cubes, chips, tortillas and salsa. And cookies and fudge for dessert. We had my DB and my SIL over for dinner. It was great.
Tomorrow rather today we will go to my in-laws for sauerkraut and pork and they are also making boiled dinner. It has always been a tradition for us to have sauerkraut and pork on NYD

my best tip for sauerkraut....squeeze,rinse well and resqueeze...not as "sour-ey"
Another good idea for sauerkraut is to put it in a mini crockpot for 24 hours before you eat it. Add about a tablespoon of brown sugar. Yummy!

We are not having sauerkraut because no one in my house likes it. We are having deer chili & cornbread.

We always eat Spareribs, sauerkraut, mashed potatoes, gravy, green beans, Black eyed peas and a Cabbage Dish.

Have to eat cabbage or sauerkraut and Blackeyed peas on New Years day for good luck through the year!!
