Weirdest thing you ever ate? octopus and snails out of their shells in Italy (and it was good)

I didn't think I'd like ____, but I did! Octopus and all seafood

Baking or Cooking? a little of both, but mainly cooking

I seem to always add this ingredient: garlic, onion, tomatoes!

Kitchen Gadget/Utensil/Appliance I couldn’t live without: garlic mincer, onion chopper and my big skillet!

I enjoy being in the kitchen because: I like being productive with food and I love seeing how things come together in SMELL and taste

If my kitchen could talk it would say “this” about me: Girl, you need help with your seasonings!

I learned everything I know about cooking from: Living in Italy and my Italian friends

What I try to teach my kids about cooking: Patience!!!

Funniest cooking story: My dh is a great about eating everything and anything. If it doesn't turn out the way I wanted it to, it always goes down good with a beer!

My family LOVES it when I cook this: My Enchi-rittos and home made pizzas on Thursday nights (the recipes are in the forum already!)

My Favorite Recipe:
Christy's Chicken Enchi-rittos
**A cross between a burrito and an enchilada. Can be as spicey or as mild as you want. Very filling. Perfect for 6 adults.**

What you will need:

1 pkg of 8-10 large burrito tortillas
2 mexi-seasoned cooked chicken breasts (any way you like it), shredded
2-3 large cans of enchilada sauce (mild or hot, green or red)
1 pkg of mexican shredded cheese
1 can of refried beans (regular, veggie or fat free)
1 pkg of prepared spanish rice (try and do ahead of time)


What to do:

Preheat over to 400

If rice is not already prepared, go ahead and do so
While it is simmering, take all of the ingredients listed above and organize them in a buffet style on your counter top in this order: tortillas, beans, rice, chicken, cheese

Take the tortilla and spread on its surface about 1 - 2 tbs of refried beans. Make sure the beans cover the majority of the tortilla.

Then add about 2 - 3 tbs of rice. Spread evenly over beans.

Add to that about a handful of chicken and sprinkle some cheese on top of that.

Pour a line of sauce on the top ~ to keep it moist inside while baking. Fold over the tortilla and form it into a burrito. Place in a 13X9 greased pan.

Repeat steps until all ingredients have been used.

If there is some chicken remaining, sprinkle some on top of all the enchi-rittos before baking them. Then pour enchilada sauce over the burritos in the pan so that they are completely covered in sauce. Top with cheese.

Bake for 45 minute or until the cheese bubbles and the tortillas appear golden brown.

Serve with sour cream and guacamole, and chips and salsa!

What I like the most about this recipe is that you can modify it to meet your dietary needs. For example you can make it as hot or as mild as you want by spicing up your chicken, your enchilada sauce, your refried beans. AND you can make it as low fat/low carb as you want it too. Substitute all ingredients for low fat or low carb options like low fat/fat free sour cream, low fat/fat free beans, low carb tortillas, low fat shredded cheese.

I might be partial in saying this, but it is a crowd favorite. Everytime I make this, it's when we have a bunch of people over. Without fail I get asked for this recipe! The funny thing is, as Maleesa knows, I don't do recipes. I just kinda wing it...but having been asked for it so many times, I had to measure things out to make it official so I could give it away to people!!!

It's very filling and it's great for when you have company over....or for having leftovers for the next night!
