You can bake them, cut them in half, scoop out the middle, save that for potato soup, or maybe even mashed potatoes. Then sprinkle cheese and bacon, chives, or any other favorite topping on the skins, and flash freeze then slide them in freezer bags to store. YOu can also make twiced baked potatoes by mixing the potato with sour cream or cream cheese some milk, cheddar cheese, again, whatever you want to fill it with. Potatoes don't seem to freeze well unless you mash them, and it helps if there is some cream cheese or sour cream in the mix.
I can think of other good potato recipes, but they don't freeze well.
