Jaw Drop Recipe ideas for leftover pork roast

I have about 1- 1.5 lbs. of a leftover pork roast we had for dinner on New Year's Day. I was thinking about making pulled pork sandwiches & fries with it for supper tomorrow or Friday night, but it's so flippin' cold here, I was wondering about using it in a soup or stew. Any suggestions?! Thanks in advance!!

Hhmmmm, i was going to suggest making tacos or burritos with it. Im not sure of soup or stews though. I hope someone else can help you with a hot meal for your LO.

I would chop it up and heat it in a can of green chili enchilada sauce and do burritos..YUM

Easy Pork Skillet
Enjoy the flavors of pork, ramen noodles and fresh veggies in this done-in-a-flash stir-fry.

Prep Time:10 min
Start to Finish:20 min
Makes:4 servings (about 1 cup each)

1 tablespoon vegetable oil
3/4 pound pork tenderloin, cut into 1/8-inch strips
2 packages (3 ounces each) pork-flavored ramen noodles
1 1/2 cups water
1 medium red bell pepper, cut into 3/4 inch pieces (1 cup)
1 cup broccoli flowerets
4 medium green onions, cut into 1-inch pieces (1/2 cup)
1 tablespoon chopped fresh parsley or 2 teaspoons parsley flakes, if desired
1 tablespoon soy sauce


1. Heat 12-inch skillet or wok over medium-high heat. Add oil; rotate skillet to coat side.
2. Add pork; stir-fry about 5 minutes or until pork is no longer pink.
3. Gently break apart noodles. Stir noodles, seasonings from flavor packets and remaining ingredients into pork. Heat to boiling. Boil 3 to 4 minutes, stirring occasionally, until noodles are completely softened.

Go this from Betty crocker. I was just looking at this b/c I was going to make a roast ans was going to use this for the leftovers.

Oooh...thanks for all the lovely ideas, and recipes!! I asked the family what they'd like, and they said pulled pork...but I am going to make some homemade potato soup to go with it!! Thanks again!!

You could do this and make chimichangas by baking the burittos. Yum.
