Since this is such a huge topic of conversation around here now...I figured we should probably start a thread here about it....lots of us are probably looking at certain stockpiles of staples and thinking "what could I do with that?"

I'll kick off with a question......what do you do with kidney beans....I must have 20 cans of them...besides chili of course

what do you have a mountain of?

Boston Bean Dip is fantastic(I forget about this)

2 (16oz)cans kidney beans, rinsed and drained
2 1/2 Tbs minced onion
1/2 tsp minced garlic
1/2 c mayo
1/2 c sweet relish
1/4 tsp salt
1/8 tsp pepper
1/2 tsp dry mustard

Mix all and puree 1/2 the mix..then re-combine..great w/crackers

(honestly its addicting!!)

Rice is at least a fun thing to use because you do so much with it!!!

use it in burritos...casseroles....soups...stir frys...even desserts....rice pudding(and you can even do it in the crock pot)people always forget rice pudding and it is SSSOOOO good!

this is my favorite super easy rice pudding recipe, I even make it with brown rice

You could put kidney beans in tortilla soup instead if chile or black beans (I just posted recipe in the healthy crockpot meals thread).
Other than that, I don't really know what to do with kidney beans, maybe a bean salad with green beans, like the kind you get in the jar??? I couldn't find a good one, but I did find this recipe, looks good...

My thing that I have tons of is also rice but scalloped potatoes in the box

Kidney beans - I use these in bean salad which is perfect for when you only have pantry items, or are using up stockpile.
1 can kidney beans
1 can corn
1 can green beans (not French)
1 can garbanzo beans

Drain the cans and dump in a bowl. Make dressing in the blender with: 2 T. red vinegar, 4 T. olive oil, 1 T balsamic vinegar and 2 t. dill.

This is much better refrigerated. Sometimes I stick the cans in the fridge beforehand if I know I'm going to want to eat it right away.

I make fried rice with leftover whatever.
2 c. cooked rice
1 T. oil
carrots, diced
frozen peas
Leftover meat - chicken, ham or sausage
soy sauce
ginger powder
ground pepper
eggs

fry the rice in oil, add the veggies (you can put in whatever you want or have). Stir in the meat and soy sauce and spices to taste. Make a hole in the center of your pan and pour in a couple of beaten eggs. Let set, then stir up. Cook until the eggs are done.
