Question IDSO good mac-n-cheese recipe!

I have found several recipe but they are very different from each other and I was wondering if someone had a good mac-n-cheese recipe they had already tried and liked?

1 pound uncooked elbow macaroni
1/2 cup low-fat or fat-free sour cream
12-ounce can evaporated skim milk
4 ounces grated sharp Cheddar (about 1/2 cup)
4 ounces grated Monterey Jack (about 1/2 cup)
2 tablespoons Dijon mustard
1/8 teaspoon ground nutmeg
1 to 2 drops hot sauce, optional
Ground black pepper and salt
1/4 cup plain dry bread crumbs
1/4 cup grated Parmesan
Cook pasta according to package directions. Drain and transfer to a large bowl. While pasta is still hot, stir in sour cream and set aside.
Scald milk by heating in a small saucepan over medium heat until tiny bubbles just appear around the edges.
Add Cheddar and Monterey cheeses, mustard, nutmeg, hot sauce, pepper and salt to scalded milk. Simmer until cheese melts, stirring constantly.
Fold cheese mixture into pasta and transfer mixture to a serving platter.
Combine bread crumbs and Parmesan in a skillet over medium heat. Toast 1 to 2 minutes, until golden brown. Sprinkle mixture over macaroni and cheese and serve.

are you looking for a baked mac n cheese or just a stove top?

My fave is 4 a cheese concoction of muenster,cheddar cheese,sharp cheddar,and monterey jack cheese.

I have two different mac and cheese recipes that I use all the time. They are both Paula Deen recipes. Take a look and see if these will work.

Both recipes are yummy. Only changes I do make is I ususally add more cheese than the recipe calls for, other than that I do not change a thing.

here's one that uses velveta.

Over low to medium heat, make rue of the 1/4 c butter and 1/4 c flour, stirring constantly.
add 4c milk and heat through. add 1 1/2 lb velveta, cubed- I add the cubes in batches,just as the first batch is mostly melted I add another batch. stir constantly to prevent burning.
Once the mixture is melted pour over cooked elbow maccaroni. (I use a 16oz bag of maccaroni.) I like to put some thin slices of the velveta on top before I put it in the oven. I bake until the cheese melts, about 20 minutes at 350. mac and cheese mixture will be thin at first, sauce will thicken as it slightly cools.

this is my sister's recipe. I do not know where she got it. It was her secret recipe.

My kids really like my Mom's recipe...which I make, a LOT. LOL! It's really quick and easy...and you can tailor the amt of cheese to your liking. It's not a creamy mac & cheese that you'd have with a roux etc

1 lb of Macaroni
1 lb of Cheese (shredded) * Use whatever you like, my kids like a colby/chedder mix
1 C of Milk
1/2 tsp Salt
1/2 tsp Freshly Ground Pepper (or less if you're not a pepper fan)
Seasoned Bread Crumbs
2-3 T Butter (each T cut into 4 sm pieces)

Boil the macaroni until al dente. Drain well and put back into the pot. Add the amt of shredded cheese that you'd like...and quickly mix together with a spoon. Pour it into a baking dish and distribute evenly.

Dissolve the salt/pepper in the milk and pour over the top of the macaroni/cheese mixture in the baking dish.

Sprinkle the top lightly with bread crumbs.

Dot the top with butter.

Bake at 400 until bubbly - about 30 minutes.

** My kids actually really like a fine shred to the cheese over a coarser shred, not sure how they tell the difference! You can buy a block of cheese and shred it yourself or buy a bag of shredded cheese.

Tell your sister it's not that secret. It's how my mom always made it. I just made it like that last week (first time in years). My DH announced he doesn't care for it. I guess the Kraft stuff has spoiled him!
