For dinner we have some left over ribs.I am picking the meat off and making the new recipe posted under left over pork in another site I go to.Here it is-
Steph's Pork Tex Mex Soup
1 can diced tomatoes
1/2 c soy sauce
2 t pepper or pepper blend
1 packet gravy mix (optional)
2T butter (for browning pork--you will not have to do this since you have the pork cooked--just cube what you have)
1 T lawry's
1 T tex mex seasoning (optional)
lots of frozen corn
lots of frozen sugar snaps or green beans
In a 3 qt saucepan, brown pork in butter. Add tomatoes and all other ingredients EXCEPT green beans and corn. Add enough water to come a couple of inches below the top of the pot. Slow boil soup until pork is cooked through. Add corn and beans and cook JUST until beans are still firm but are warmed through. Serve over cornbread.
Now, since your meat is already cooked, this soup will pretty much be a "dump and stir"--you do not have to wait for the meat to be cooked through. :-)
The kids will have something else since they probably will not like it.Ds 11 can have chili from the freezer and Ds 6 can have ramen noodles.
