Default 4 Chix Breasts = 4 meals!!

I say "meals" (as in "dinners') but actually two of them could be lunches...

Okay, I bought a huge package of 10 chix breasts the other day, seasoned all of them, froze 4 of them, and then oven-roasted 6 of them with veggies. We ended up only eating two of the breasts, so four were left over. Here's what I did with them...

1 chix breast - I combined with Jack Daniels BBQ sauce = 2 BBQ sandwiches
1 chix breast - I made chix salad = 2 chix salad sandwiches
1 chix breast - I chopped it up, mixed with tomato pesto and a small can of tom. sauce, and froze it for a quick meal over pasta later. = 2 good-sized meals

Now for the BIG money saver...I call it my "Leftover Pot O' Somthin'"!!

1. Put 1 can chix broth + 1 and 1/2 cans water in pot to boil 2 "rice bags" of rice. (Was trying to get rid of them, so used these instead of reg. rice, but you could easily use reg. rice. Not sure of the measurments, but one can of broth = about a cup and a 1/4 if you're measuring, so add rice accordingly.)

2. After rice was done, I added to the pot:
- leftover veggies from oven roasting (carrots, potatoes, fresh green beans, and onion)
- 1 chix breast - chopped up
- one can cream of celery soup
- one can cream of chix soup
- two handfuls of leftover peas
- and about 3/4 of a soup can of milk (I rarely measure)
- a little sage, paprika, garlic powder, Adobo seasoning, and onion powder...

And that's it!! Just let all ingrediants warm up, and it's done. Came out to be about 3/4 of a big pot full, and was creamy and THICK - real tummy filler!! And the SAGE really makes the difference in taste when you make chix, IMO. YUM!!

Most of what was left went into the freezer, but DH asked me not to freeze it all. He wants more for dinner tonight!! Just wanted to add that this if for a family of three, and that my DD won't eat any of what I made with the leftovers. BUT, now I have meals ready for DH and I to just thaw out - 4 of them, at least - made with just 4 chix breasts!!

Just thought I'd share!!

You know, sometimes the best meals are those where you just use what's on hand. Whatever's left over - just throw it in!! LOL It's never boring, because it's never the same!! I love those kind of meals. Plus, you get great ideas on other ways to throw things together, adding different ingrediants next time.

I need to think like you!
I can cook, really good (I went to culinary school, but never really worked in
the industry) but I was really never taught to use what's on hand.
it was always from recipes, or my own (not so frugal) recipes.
I HAVE JUST LOST MY CREATIVE THINKING IN THE KITCHEN
I can cook super good, if I have more expensive ingredients, but
I cannot think of 1 thing to do with what's on hand.
Im always missing something.
BUT I LOVE YOUR IDEAS, AND WHAT U DID
I have some chicken breast in the freezer,
I'll try your recipes!!
maybe add some of my own things...from my pantry
hopefully, my creativity will slowly come back

I learned alot from my Grandma who was the "Leftover Queen"!! She could disguise ANYTHING leftover in another dish and no one knew!!
