I made a veggie lasagna tonight and dh did not even notice that there was not meat in it. I liked it alot and it did not leave me with that heavy feeling afterward.

what are some of your favorite meatless meals?

Frequently we have spaghetti with no meat. Pancakes are also a favorite here.

Spaghetti and sauce here too
Boca burgers (or veggie burgers) with grilled onions and avocado with bbq sauce (you put enough stuff on them and they taste good) and oven fries
Eggplant bake (use baked eggplant slices instead of lasagne noodles, layer with sauce, cooked zucchini and peppers and mozzarella cheese), serve with pasta and parm cheese-so good!!!
Vegetarian chili, use a chicken or beef broth and add lots of beans and corn, serve with all the fixins
Tostadas, lightly fry corn tortillas in canola oil (flat), put a layer of refried beans, sour cream, cheese, lettuce, tomato, avocado
Refried bean, cheese and sauteed spinach enchiliadas, the sauce covers up everything, serve with all the fixins (we practically put a salad on ours)
We also eat tofu in stir fry's and thai food (like the pad thai box you can buy)

I think the key to meatless meals is the condiments served with it, the sauces and spices.

Our meatless meals are:

Pizza with just cheese or lots of veggies as a topping
Homemade burritos with refried beans and rice with cheese
Pasta with veggies tossed with pesto or a little olive oil
peppers stuffed with rice and veggie crumbles and assorted seasonings

I like the tostadas idea!

We eat alot of soup & grilled cheesers for lunch, yummy

I'm not sure of the boca burgers lol and I don't really like tofu

but I am making a start to do this more often, better all around!

we eat a lot Of Meatless meals as my family is Vegetarian!

you can make Chilli with more veggies in it and beans!! We eat a lot of that!!

also Mac N cheese with tomates (or pasta and tomatoes)

We don't eat meat in the home any more. I do a lot of the usual pizzas, pastas,veggie chili, etc. For stuff that calls for meat as kind of a "necessity" in the recipe, I try to see if a veggie will work. For example I make a enchiladas but substitute sauteed zucchini, mushrooms, and onions for the chicken, then keep the rest of the recipe the same. I also LOVE soy crumbles and will put them in anything, except they can be expensive if not on sale.

I make homemade vegetable soup once per week.

I've been making chili, but instead of meat adding rice, tomatoes, chili spices, beans and corn. I serve it in a baked tortilla bowl and top w/ cheese.

Tonight I made a broccoli and potatoe soup (from Rachel Rays new magazine) with it I made two strombolis, one w/ spinach, broccoli and cheese and the other pizza sauce and cheese (would have added black olives if I had some, mushrooms would be good too)

Buffalo "chicken" salads. The whole family likes Morningstar Farms "chicken" patties. I just bake them put hot sauce on them, cut them up and put on a big salad.

I make vegetable stir fry about once per week.

Spaghetti once per week. Sometimes gnocchi (in freezer section) w/ sauce.

Swiss chard pizza is yummy. Just saute swiss chard w/ galic, hot pepper and some salt. And put on a pizza crust. I like to use frozen bread dough for my crust, you can add another crust on top too, sprinkle with parmasian and oregano.

That's all I can think of for now, but I know there is more.....
