Default Broccoli and Cheese?

I love broccoli and cheese but I am having a difficult time with the cheese part. It always seems to runny. Does any one know a somewhat healthy sauce I can use. I just don't have any luck. Thanks!

I don't think there is such a thing as a healthy sauce.

Try this -

Steam some fresh broccoli in the microwave. While it's still pretty firm, transfer it to a saute pan on the stove, that has a little bit of olive oil in it. Saute the broccoli in the olive oil a few minutes - toss in some pine nuts if you have any - some garlic is good too. Just before serving, sprinkle it with some fresh grated parmesan cheese. Mmmmm....

I make my own cheese sauce

melt 2-3 Tbs butter
stir in 2-3 Tbs flour
cook about 2 min over med
stir in 1 c milk...whisk til think and smooth and add 1-1/2 c shredded cheddar or a good sized chunk of velveeta...dash of cayenne or paprika and some pepper.

and just pour over steamed broccoli.

I use ConQueso in the jar and I get it at the dollar store.When the broccoli is done I add some on top and mix it in and the hot broccoli or califlower heats it up.Whalla done and so good.
