I have boneless chicken breasts and chicken tenders in the freezer and am looking for some creative ways to use them. I'm tired of the same old thing and my cook books are packed up to go into storage. My brain hurts form thinking, help! Thanks, Y'all.

I like to fry them up in olive oil w/them covered in bread crumbs, garlic powder and parmesan cheese. I also cut them up and make chicken fahitas, dh loves the leftovers in eggs the next morning. I even dump salsa on them and some cheese and bake. We love them w/just bbq sauce too or baked w/cream of broccoli soup and frozen broccoli w/cheese. One of my fav's is in a sourcream/onion/paprika sauce too. hth!!

Dh loves pizza so we dice up the breasts and cook them in butter. Then we use them to make chicken alfredo pizza like they do at Papa Johns. We add some spinach and fresh tomato too.
We also use tenderloins and bake in a casserole with cream of chicken soup, frozen veggies and top with the Pepperidge Farm dressing.

I put them in the crock pot frozen on high. *An hour or two in, I sprinkle them with taco seasoning. *After about 4 hours they will be so tender they fall apart. *It's super easy to shred them. *I use them to make enchiliadas or burritos. *Or add BBQ sauce to make sandwiches. *But my favorite is to add Frank's Red Hot and put them over greens. *Add some Bleu Cheese dressing and it's the yummiest salad.

I make Captain Crunch Chicken - it's yummy! You just cut the breasts into strips, and bread them starting with flour mixed with a little garlic salt and pepper, then dunk in egg wash, then in a mixture of smashed up Captain Crunch cereal and smashed up corn flakes (you can buy cornflake crumb breading in some stores - I get it at Whole Foods). Then you can either fry it in a pan of oil, or oven fry it on a cookie sheet coated with oil (I do it at 350 for 15 minutes, then turn them over and cook for another 15 minutes). I am making this tonight and serving it with sweet potato fries (the frozen ones from Walmart - LOL). Hope that helps!

Those are some great ideas. I'm just bored with everything I usually make and wanted some fresh ideas. Calimari's chicken bake sounds really good, my kids would love it. I wish I liked Indian food, it would open up lots of posibilities. Thanks for the ideas

In a slow cooker, or you can bake: them and lots of salsa. Yum - serve like fajitas!

I put orange marmalade on them near the end of cooking time. I do this with salmon, also.

On top of salad. Great source of protein!
