I am so sorry that I have not been around. Right after I was picked to be Dish of the week, I had a family emergency and was not around to a computer for some time. I am back now though.

Thank you to everyone that responded....

Grandma's Watergate Cake is a Pistachio Cake that is SOOOO yummy!
I feel so bad though, because I cannot remember all of the ingredients right now (Of course, when you need then you can't remember them. LOL) and I looked for the recipe and can not find it.
I tried to call my grandma but she is not home (Sh eis an 86 yo social butterfly!) so I called my mother and she will call me when she gets home with the recipe. I promise to post it ASAP.
I know tha tyou use a box of white or yello cake mix, a package of pistachio instant pudding (you can use any other flavor instant pudding that you want too), I think that it is 1 cup of vegatable or Canola oil and some water, I think but I am not too sure.
I know that the topping is a container of whipped topping (I usually use non-fat) thawed, and a package of instant pudding (again whatever flavoer that you want) fold it together and top the cake. It is so moist and yummy!

Let me tell you giving up Mint chocolate chip ice cream was the hardest thing to do when I started losing weight. I was SOOOO happy when Weight Watchers and Skinny Cow started to make novelty cones and cups with mint chip ice cream.

DH brought in a 1/2 gallon of it about 3 weeks ago, well, I was up 1.5 lbs 2 weeks later (Addison and I had at least 2 cups of it a day. LOL!)

We are in NY too and we have a local ice cream store that their light Mint Choc. Ice Cream is delicious. He brought it into the house about 1 week ago and yup, I had to finish it! That too was my downfall when I started WW but I agree I was happy to see Skinny Cow & WW come out with products.

Where in NY are you?

For those of you that wew interested in Watergate Cake, I finally received the recipe again...

1 box yellow/white cake mix
1 pkg instant pistachio pudding
1 c oil
1 c ginger ale
3 eggs
1/2 c walunts (optional)
Bake as directed on cake box

Whipped topping
1 tub of wipped topping
1 package pistachio instant pudding
1 1/4 milk

mix milk and pudding mix together until firm and then fold whipped topping in until just blended.

*** I have made this recipe with other flavors of instant pudding too and it comes out just as yummy. I love it because it is so moist and tastey. I hope whoever tries it let's me know whta they think of it.
************************************************** ***************

In honor of St. Paddy's Day I figured that I would share my Great-Grandma's recipe for Irish Soda bread too.

1 stick butter
4 c flour
1 ssp salt
2 tsp baking powder
1 c sugar
1 c raisins
1 tbl caroway seeds
2 eggs
1 1/4 c butter milk
1tsp baking soda

Melt the stick of butter
mix together the flour, salt, baking powder and sugar
Add melteed butter and mix until curmbly
Stir in Caroway seeds and raisins
Add eggs, milk and baking soda and mix together thoughly
**mixture will be very sticky** I find that mixing it together with my hands work best. It is messy but great.
If you have a cast iron pan, place in greased pan and cook at 335 for 1 hour. If not, any pan will do, it may just take a little longer. Check to doneness by golden brown color outside.
**I too have altered this recipe. It you do not like Caroway seeds you can omit them and it still tastes just as good. With the riasins, I advise that you use 1/3 a cup at the very least for the natural sweetness and for the moisture. You can pick them out of the piece that you are eating if you do not like raisins.

I hope that you all like the recipes!

I'll be in the Durham area Memorial Day weekend for the Irish Festival.

Albany is not that far from me. DH an di have been known to drive to Albany for concerts and then home inthe same day.
