You can use them in pasta instead of meat. Just make a pasta like penne where you finish it in the sauce. Then start the sauce with a couple of strips of bacon for flavoring, onion, garlic, spinach and fresh tomatoes, sautee the chick peas in and add a little broth, let it simmer. Then add the almost cooked penne and simmer until cooked. Add some parm cheese to the dish directly, stir it in. Also add more cheese on the side for topping. It really comes out pretty good as a meatless meal. This is also just the way I do it, I'm sure there is more interesting recipes out there.

I had a friend in college who's mom used them in pasta sauce.

I've never really liked them, so sorry I can't be more helpful!

I make these.

Roasted Chickpeas

2 Cups Canned Chickpeas, drained
1/4 teaspoon Garlic Powder
1/8 teaspoon Cayenne Pepper
Salt to taste

Preheat oven to 375. Spray cookie sheet (with sides to prevent chickpeas from rolling off) with butter spray or olive oil spray.
Spread chickpeas on pan in a single layer and sprinkle with the remaining ingredients. Bake 50-60 minutes until golden and crispy, shaking the pan every 15 minutes to prevent scorching. If the chickpeas aren't crispy enough for you, simply bake them a little longer. If they're starting to get too brown, turn the temperature down a little.
Allow to cool completely before storing.
