araefinn, My DH is cooking challenged too! It is soo hard to find easy, easy meals!
How about lasagna, frozen and he can reheat?
meatballs, to use with sub sandwiches or spaghetti
chili in the crockpot
Good luck! I know where you are coming from!

Okay, here's this week. I've been all off since everyone keeps getting sick and picky with eating and normal meals have been rare, I'm hoping we get completely back on track this week (even though now ds has pink eye, yuck!)
I'm also trying to cut out some meat to try to lower my grocery bill (it is getting outrageous here!) and I just feel like eating lighter, must be the spring weather

teriyaki pork tenderloin, garlic brown rice, asian bag salad
some ham/mushroom/pepper/zucchini/onion/cheese quiche, salad (twice)
fish tacos, black beans, veggies, cheese and sour cream
spanish rice with some ground turkey, black beans, peas, cornbread
veggie burgers with avocado, roasted potatoes and veggies
bbq pork ribs, garlic brown rice, artichokes
lentil spinach soup (with ham bone), crusty bread
tostadas with refried beans, veggies, some ground turkey taco meat, cheese and sour cream
tofu in red curry with pepper, potato, onion, zucchini, carrot and brown rice
pasta with one italian sausage, eggplant, canned tomatoes, sauce, onion, garlic

I bought a bag of dried black beans, dried pinto beans and lentils. I'm trying to find some healthier sources of protein for less. We'll see how it goes.
