Rice Flour is used in a ton of Gluten Free recipes....the best is if you have "superfine"for baking...then it doesn't crumble as much.
Shortbread Cookies
-----------------------
1 c sugar
2 c butter, softened
3 1/2 c all-purpose flour
1 c white rice flour
2 Tbs white sugar
Preheat oven to 350.
Cream butter and 1 c of sugar til very fluffy.
Slowly add the flour and rice flour,when dough gets stif,turn it out onto a well floured surface, and knead til smooth. (you can add nuts and choc chips also if you want)
Press dough into a 10x15 jellyroll pan, score into bars and prick with a fork. Sprinkle remaining sugar over the top, and bake for 30-35 min,til golden brown. Cut along scored lines into bars while still warm. Cool before serving.
This helps use it up in a more "regular" way...most recipes with rice flour include xanthan gum and other gluten free ingredients.
