I am writing to see if anyone has a great (but simple) orzo recipe. My Dh and I recently ate at a restaraunt and he loved the stuff. We had never had it before. I would like the recipe to be simple if possible (meaning only a few ingredients), due to the fact that I am not exactly talented in the cooking area Thanks in advance for any suggestions.

BTW, the one we ate had spinach, garlic (maybe), and tomatoes in it.

We love orzo...we have it all the time.

I really just mix it with whatever we have around if I want to have it with veggies, or we have it with fresh herbs, butter and fresh parmesean.

I really like using Food Network : Healthy Recipe Collections, Party Ideas, Quick & Easy Recipes, Cooking Videos or Epicurious.com: Recipes, Menus, Cooking Articles & Food Guides to find new recipes. What I like is they have an option to review the recipe and I find other people's comments invaluable.

Found this Rachael Ray Recipe for ya "Orzo with Spinach and Tomatoes" - Read the Review though, great tips there!

I love it as a greek salad. I make a dressing out of:

Garlic, minced
Lemon juice
Extra virgin olive oil
(whisk until forms and emulsion)

Then I add:
artichokes
black olives
feta
tomatoes

YUMMMMY!

This sounded so yummy I went out today and bought orzo, spinach and tomatoes, and make a huge bowl of this. It's all I ate for dinner. YUM!! Wish I remembered the feta cheese though.

We just had orzo for dinner last night for the first time! I have had a box of it in my pantry for over a year and I finally used it (who knows what the original intent was, but the box has been there a long time). I followed a recipe from "Cheap. Fast. Good!" by Beverly Mills & Alicia Ross (authors of Desperation Dinners). It had stewed tomatoes, black olives, artichoke hearts and chicken and then you sprinkled feta on top. It was yummy and my kids devoured it (they love stewed tomatoes and olives though). You basically just brown the chicken (boneless breasts cut up into pieces) with some onion, then add a can of stewed tomatoes, a small can of tomato sauce, a can of sliced olives (I used 2 since my kids LOVE them), a can of artichoke hearts and some basil and oregano. You cook the orzo seperate and serve the chicken/tomatoes on top and sprinkle with feta. I like the other suggestions too - I might have to buy another box of orzo sometime

Oooh....I hadn't thought of adding a can of stewed tomatoes. That would probably be good too instead of the fresh tomatoes and one less chopping step!!

I'm Greek and orzo is a staple. I usually just boil it up, drain, and add tomato sauce, cinnamon and paprika. It is a very unique flavor.
