French Bread

1 cup water
3 cups flour
3/4 tsp. salt
1 tsp yeast

Mix all ingredients in pan and select dough cycle.

When cycle is complete, remove dough. I shape it at this point and let it rest, covered 30-40 minutes. Slice diagonal cuts and brush with a little egg white. Bake at 375 degrees for 20 minutes (makes a softer crust) or at 420 degress for 20 minutes and makes a harder crust.

I rarely bake the bread in my machine because I don't like the shape of it. But that is me! Sometimes I go for softer crust - sometimes harder. But this is the loaf of bread that I take to peoples' homes and for potlucks! It is very popular!
