Default "Planned Leftovers" meal ideas

I noticed this idea in TWO places here on the boards. Rainbowmom posted this in the Frugal Living forums: "I try to use planned leftovers. Roast beef becomes sliced beef in gravy with potatoes - or - beef stroganoff over noodles - or it goes into my "leftover soup" container in the freezer. Chicken becomes a pot pie or a casserole or a soup. Ham goes into scalloped potatoes and ham."

Also, the Frugal Foodie did a blog on the same topic (Black Beans).

This week it was turkey, that started as turkey dinner, leftovers were: sandwiches for lunch, turkey soup and turkey enchiladas.

I always plan for leftovers if we grill chicken breasts, then we can cut them up for salads, quesadillas, or wraps the next day. I have also added them to soups, really good in some of the Tastefully Simple soups! If we make tacos or sloppy joes I make extras and we freeze it in single servings in bags so we can take out just a serving or two for a quick lunch. I do the same for shredded chicken or beef for sandwiches. I also like to make a couple extra baked potatoes when we have them, they are so good sliced the next day and fried, and extra mashed potatoes are even better as potato cakes the next day, too!

Chili for chili dogs one night got mixed into macaroni and cheese for Chili-mac later that week. It's not the most creative thing in the world, but it made a box of mac and cheese stretch a little further since I normally have to use 2 to feed the whole family.

Turkey : lay a piece of bread on a plate, top with turkey, mashed potatoes and gravy

Always here also!!

I rarely make something for one meal only. Sometimes I will eat it as plain leftovers but most of the time I will transform it into something else.

Every week I cook a chicken or a ham. We use the leftovers for everything else mentionned above. Also I will make spaghetti one night and use the leftover as a side dish with mini pizzas on another night. If I cook pasta for something I cook more than needed and keep the extra to make mac & cheese on another night.

I love leftovers, they are life savers around here.

Mine are usually just re-heated leftovers. But I do plan it!! I do buy big pks of tortillas and make tacos then use the rest on quesadillas.

Mostly in the winter cause I bake more.
Here are a few:
*mashed potatoes- fried potato cakes, cheeseburger potato pie
*steamed rice- desert or breakfast heated with cinnamon & sugar, add meat for fried rice
*ham- potato soup, ham & cheese omellettes, casserole,
*pot roast- hot beef sandwiches, stir fry, vege beef soup, add bbq sauce for sandwiches,shepherd pie
*whole chicken- chicken quesadilas, chicken tortellini soup, casserole, stir fry, fried rice, sandwiches
