Asparagus
Olive Oil
Salt & Pepper
Feta Cheese - one pkg - crumbled

~ Clean Asparagus and break off ends, place on a cookie sheet
~ Coat with Olive Oil, salt & pepper
~ Set oven to broil, cook about 15 minutes (or until desired tenderness). Tops will get slightly crisp.
~ Place on serving dish and sprinkle with Feta Cheese.

Soooo yummy! Can also be made on the grill

I don't measure that much so I will try my best to describe this recipe.

I take a LARGE can of diced tomatoes, Italian seasoned (fresh basil, fresh minced garlic, and parsley) and add one can of artichokes (chopped). Stir it all together.

Place four chicken breasts in the bottom of a 9x9 greased pan. Coat breasts with tomato mixture. Top with parmasean cheese. Cover with aluminum foil.

Bake at 400 for up to 35 minutes.

Serve with Penne Pasta and garlic bread.

5 Tbs butter,soft
1 c dark brown sugar,packed
2 tsp cinnamon
1/4 c pecans or walnuts,toasted n chopped
4 apples, peeled-cored-halved
1 9in pie crusts
1 egg white
2 Tbs sugar
2 tsp cornstarch

Adjust oven rack to lower-middle.
Heat oven to 425.


Mix 3 Tbs butter, 1/2 c brown sugar, 1 tsp cinnamon and nuts. Spoon a portion of the mixture into each hollowed-out apple core.

For boxed pie crusts, unroll one of the dough sheets onto a floured work surface. Pulling on sides of dough to straighten rounded edges, roll it into an approximate 12in square, then cut the dough into four 6in squares,brush the edges of each square with egg white.

Set an apple half on each square. Bring up the 4 corners of dough around the apple and pinch edges to seal. Place on a 18x12 parchment lined baking dish.

Brush dumpling tops and sides with egg white; sprinkle with sugar. Repeat process with remaining apples and dough.

Bake dumplings til pastry sets and starts to turn golden brown, about 10 min. Reduce heat to 375 and bake til golden brown, about 20 min longer.

While apples bake, bring 1 c water, the last 2 Tbs butter, 1/2 c brown sugar and 1 tsp cinnamon to boil in saucepan over med heat. Dissolve cornstarch in 2 tsp water,whisk into hot syrup for a smooth sauce. Cover, keep warm.

To serve-
Spoon sauce on a dessert plate. Set apple dumpling over warm sauce and serve immediately.


This is perfection!

Hot Artichoke Dip

1 can artichoke hearts, drained
1 10-oz package spinach, drained completely
2 cloves garlic, minced
1 8-oz block cream cheese
1/2 c. sour cream
1/2. c. mayonaise
1 cup Romano cheese

Mix all ingredients together and bake at 350 until hot, bubbly and brown on top. I've also added minced red peppers and/or pimentos to this to add color which is really good too. YUMMY!

ooohhh Kim that is a good one!

I'm stumped, I make a great applesauce but it is done by taste and I've never written it down..

Apples, sugar, cinnamon, little bit of nutmeg!

Avocado Salsa~~~This will be a new fave if you like quacamole and Feta cheese-seriously it rules!!!
Everyone will want the recipe!!!


2 plum tomatoes, chopped
2 ripe avocado,pit,peel,chop
1/4 c minced red onion
1 clove garlic, minced
2 Tbs fresh cilantro,chopped
1 Tbs olive oil
1 Tbs red(or white)wine vinegar
4 oz crumbled feta cheese

Mix all up in the morning and enjoy at dinner time...AWESOME!!!!

Artichoke Chicken

1 (15oz)can artichoke hearts,patted dry,chopped(I prefer marinated)
3/4 c grated Parmesan cheese
1/2 c mayo
1/4 c sour cream
1 tsp minced garlic
4 skinless, boneless chicken breast halves


Preheat oven to 375.

Mix artichoke hearts,parmesan cheese,mayo,sour cream and garlic.
Put chicken in a greased baking dish, and cover w/artichoke mixture.
Bake,uncovered,30 min,til chicken is done.

2 Tips:
1 -apple some pressure between paper towels to really drain the artichokes.

2 -you dont have to....but for presentation...I like to sprinkle w/a little bread crumbs,little paprika on top of that....light spray last min w/pam and then brown the top at the end of baking time a little.

THIS IS GOOD ENOUGH FOR COMPANY!

Seving idea....

serve over a small bed of pasta w/asparagus
