I would invent a "hidden" cooktop. Ours is in our island, and I would love to be able to put it down (imagine a sewing machine table) below the counter top when not in use so that I could use the ENTIRE island with the cooktop in the way.

Or do they have those already and I'm just behind the times ??

I guess you would like something like the glass induction cook top. I tried copy pasting the link, it's not working. I have had these in our previous house and is a pain to clean.

Since, this is America, you can find anything you want. I found this website, take a look: COOK TOP COVER, Create additional counter top space quickly and easily, great for parties.
