Cantaloupe Smoothie

1/2 c o.j.
1/2 c cubed cantaloupe
honey(however much ya like)
1/2 c ice

Blend all and voila...

Cajun Corn(on the cob)

Boil corn as usual(or grill).

Mix 1/2 c softened butter w/4-6 Tbs cajun seasonings and slather on!!

My sister hoardes this stuff....and my dh will only eat corn on the cob with this butter!!
Great w/steaks!

CHEESY BISCUIT PIZZAS

1 (12 oz.) can Pillsbury Big Country Refrig. Buttermilk Biscuits
2/3 c. pizza sauce
5 oz. (1 1/4 c.) shredded mozzarella cheese
1 1/2 oz. (1/3 c.) sliced pepperoni

-Heat oven to 400 degrees. Place biscuits on 2 greased cookie sheets. Press each biscuit into a 5 in. round.
-Spread 1 tbsp. pizza sauce on each round. Top with shredded cheese & pepperoni.
-Bake at 400 degrees for 9-12 mins. or until crust is golden brown.

CARAMEL CRUNCH BARS

4 1/2 Honey Maid Honey Grahams (I use any brand)
1 bag (11 oz.) Kraft caramel bits
2 Tbsp. milk
1/2 c. Planters Cocktail Peanuts (I use any brand)
1/2 c. Jet-Puffed miniature marshmallows (I use any brand)
1/2 c. coarsely crushed pretzels
4 squares Baker's Semi-Sweet Baking Chocolate, melted

-Line 8 inch sq. pan with foil, with end of foil extending over the sides of the pan. Grease the foil with shortening. Place grahams on bottom of pan, you may need to cut them to fit.
-Microwave caramel bits and milk on high 2 mins. or until caramel bits are completely melted and mixture is well blended, stirring every 30 secs. pour this over grahams, top with peanuts, marshmallows and pretzels. Then drizzle with chocolate.
-Place in refrigerator for 1 hour. Use foil handles to remove the bars from pan before cutting into squares.

I missed St Paddy's Day this year..

1 large brisket
2 medium heads of cabbage (quater and then cut again)
4-6 onions sliced
8-10 potatoes cleaned and quartered
1 pkg carrots

put the brisket in the bottom of large roating pan on rack, add potatoes, carrots, onions and then cabbage. Put a little of water in the bottom to get started. As the cabbage cooks it will provide more water in you pan. Cook according to the directions on brisket. I usually go a little longer so it tender.

2 tsp garlic powder, or to taste
1 tsp pepper
1 tsp salt(lawrys or season salt works good too)
1 tsp paprika
1 tsp italian seasonings
1/2 c seasoned bread crumbs
1 c flour
1/2 c milk
1 egg
4 skinless, boneless chicken breast halves - pounded thin
1 c oil for frying, or more


Mix garlic powder, pepper, salt, paprika,italian seasonings,bread crumbs and flour.

Whisk milk and egg.

Heat the oil to 350.

Dip chicken in egg and milk, then dredge in the dry til evenly coated.

Fry chicken in the hot oil for about 5 minutes per side,til cooked through and juices run clear. Remove from the oil with a slotted spatula, and serve.

*NOTE*
The best way to fry any chicken(or also onion rings)is to soak in buttermilk first about 5-6 hours)

...you can also toss in some parmasean cheese!
