I'm going to be making apple muffins tonight & the recipe uses buttermilk. I have a container that's been open a couple weeks with an expiration date of 9/24. Would you use it in the recipe, or should I just make sour milk with lemon juice? Thanks.

If it smells and tastes ok, I'd use it. If it smells even a bit off, do not use!!

See that's the problem. I don't think I've ever tasted buttermilk by itself to know if it tastes off, and since it smells sour anyway, it's hard to tell. I'll probably end up not using it because the muffins are for Quentin's preschool class, and I don't want to give them all food poisoning!

In that case, I'd make the sour milk.
