After all dh's medical issues lately he has to watch what he eats. He cannot have any thing spicey, no tomato products, no onions, no greasy foods, low fat, low sodium, no chocolate. Most of the foods we normally eat are tomato based, and spicy!! I need low cost, quick and easy meal ideas!!! Help please!

Yikesthat is a hard diet! Especially if you have to do the whole family that way. I'm thinking pasta meals without tomato sauce. Maybe with pesto sauce instead, or cold pasta salads with low fat mayo or low fat salad dressing? Maybe some grilled chicken and frozen veggies? Then you could spice up everyone else's chicken and put his just plain. Beans and rice? Rinse the beans first to get out the salt. Breakfast for dinner but make his eggs with whites only and no salty meats for him?

Hang in there, that's a tricky one!

My husband diets but not for medical reasons. I manage to keep things cheaper by getting boneless, skinless chicken breasts and fish on sale. We do a frozen veggie every night, and pasta with italian dressing a lot. low fat of course. I serve a big salad every night. Everything I buy is low or not fat. I make things with salsa a lot since it is low in fat and calories. chicken with salsa and a little low fat fiesta cheese baked is a favorite. low fat sour cream on the side.

Grilled meats - chicken, fish, lean beef. Marinate them in things like low fat italian dressing, a mixture of low-sodium soy or teriyaki sauce thinned out with water, with a splash of flavored vinegar. Put the sliced meat on top of salad & have a salad entree w/light dressing. EXCELLENT marinade for chicken: just cover it with crushed kiwi for about 5 minutes. It will be very tender.

Rice is a great side dish - try the various brown rices/red rices - cook them in some vegetable or fat-free chicken broth for added flavor.

I buy those bags of flash-frozen chicken breasts. You can cook them right from frozen in 45 minutes in the oven. Just put them in a pyrex pan in the oven & bake them. Some variations I do: pour salsa over them & top w/ some cheese (probably not so great for your DH due to tomatoes); Top w/ a little BBQ sauce, top with a honey/mustard mixture (that's a good one for you).

Look in the low fat portion of the kitchen chatter. I can give you a really easy chicken and dumplings recipe, but I have to run to t-ball right now. My kids like that. Do you like soups? I have quite a few soup recipes that would work, too, that are inexpensive and easy.
