although im not vegetarian, i was a while back.
I love tofu scambled (you have to find the extra firm) with peppers, onions and tumeric (makes it a bit yellow)

also, stir fry with tempeh or tofu is great.
grilled veggie sandwich yum (just roast red pepper, zuccini, onions and eggplant with salt, pepper, italian spices and olive oil. let them caramelize a bit. then make them in a sandwich.

if you are vegan (no animal products what so ever) then you may be able to find vegan breads and such.
if there are none in your area, you can find online stores that sell tons of neet stuff.
good luck

for some great recipes you can also look under the main dish thread...there's a vegetarian topic in there!

I will strongly recommend to you PETA's website, I think it is GoVeg.com: Vegetarian and Vegan Information, but you can google it to be sure. Whether or not you are doing it for animal rights reason's or not ( I personally just don't like meat-it's gross to me), they have very easy and helpful recipes and meal ideas. They also give ideas how to make some typical meals vegetarian. I have not eaten meat in a long time, but that website helped me with some new things I hadn't thought of before!
