I have 1/2 of a large rectangle of velveeta and I do not know what to do with it. I do not ever buy it myself. Only reason why I have some now is my neighors are going out of town for a week or so and she gave it to me. I looked at the Kraft website, but didnt see anything that looked good.
Only thing I can come up with is mac and cheese and some sort of dip.

I love Velveeta. I use it often to make a cheesy salsa dip for dh and me. I put it in casseroles. I use it to make cheese potatoes. I usually stock up on it when it goes on sale.

My mom always used it for mac & cheese or for a cheese sauce over veggies. Nuke it & mix it w/ salsa for a tasty dip w/ tortilla chips, like the other said. I have a recipe for broccoli cheese casserole that calls for cheese whiz & I imagine I could substitute velveeta for it as well. I have some in the fridge now as I recently wanted my mom's mac and cheese, but I don't normally have it in the house.
