Has anyone tried this cake? Where you mix a can of soda with a box of cake mix and bake? What is it like? Is it as good as everyone says it is?

My Mom used to make a cola cake...it was homemade though, not with a mix. It was really moist IIRC...I haven't made it in YEARS. I might have to make it tonight! LOL! I'm noticing the marshallows in the recipe and am trying not to let that scare me off...LOL.

2 1/3 C All Purpose Flour
2 C Sugar
1 tsp Baking Soda
1 C Cola
2/3 C Butter
2 T Unsweetened Cocoa Powder
2 Eggs (room temp)
1/2 C Buttermilk (room temp)
2 tsp Vanilla
1 1/2 C Tiny Marshmallows

In a large mixing bowl, stir together the flour, sugar, baking soda and set aside.

In a saucepan, bring the cola, butter and cocoa powder to a low bowl. Remove from heat. Pour over the flour mixture. Stir until just combined. Add eggs, buttermilk and vanilla. Stir until combined. Gently stir in marshamallows (they will float).

Pour the batter into a 13 x 9 x 2 greased pan. Bake at 350 until the center springs back to touch or a tester comes out clean. Approximately 30 minutes.

WOW, it is the most wonderfully moist cake I have ever eaten. It has a light texture, with a nice gooey top. I love it. Not only does it taste good, but it has half the calories prepared this way, than by following the box way. Just mix the diet coke and cake mix until blended. Then cook in a 350 oven as the box says. About 18 minutes for cupcakes, etc. Just use a toothpick to test if they're done. Tada, cupcakes. I doubt you stop at one, I can't. I am guessing it is just as good with regular cola too.

Yes it is good! It doesn't keep as long though. when on ww''s I would make diet soda cake all the time in muffins then freeze them so I wouldn't eat them all at once. I like to mix up the flavors chocolate cake & cherry coke and etc.

Diet Coke works with Chocolate or Dark Cake mixes.
Diet Sprite works with white, yellow, spice, and strawberry cake mixes.
Diet Sunkist and a yellow cake mix tastes like a dreamsicle.

Just the soda and cake mix? No eggs, oil, water?
