Default Idea for using leftover veggies each week...

Yesterday I was trying to think of how I might start a new system in order to use up ALL the leftover veggies from meals during the week, and at the same time - save myself time.

The first thing that came to mind was casseroles. (However, I suppose a weekly veggie soup would be easier, but my family doesn't eat alot of soups.) I think from now on I will serve one or two veggies with a meal during the week (like peas, corn, carrots, green beans, etc.) then save all the leftovers (throwing them all together in a freezer bag in the freezer) and at the end of the week - say each Friday - I'll make a casserole or pot pie, throwing in whatever I have, and call that "Casserole Night"!!

I'm sure this is probably something that alot of you already do, but I just now realized that this could really save me not only money (since leftover veggies rarely get eaten in this house) but also the hassle of trying to decide what to make for at least ONE night of the week!!

I'll start Monday!!

Shepards pie-
layer cooked beef with gravy,topped with a layer of what ever veggies you have mixed up,topped with mashed potatoes and then if you would like some cheddar cheese bake until heated through.

or what I do some times is take a couple of the different veggies lets say from monday peas and tuesday carrots and mix them and heat them up for Wednesday night.

You could also do a stir fry with chx or beef
Also fried rice with with peas and carrots
