Two questions!

1. Does anyone have a good recipe?

2. Is it possible to use imitation crab meat and still have them taste good?

Thanks for any advice! I had some wonderful ones that I bought from the store but they are now $5.00 a cake! The first time I bought them they were $1.00 each. The meat guy talked me into them -- he's like a drug dealer. Hooks me in at a low price, gets me addicted, and then raises the price!

Here is the one I always use and yes you can use imitation crab meat.

CRAB CAKES

1 lb. crab meat
1 egg, beaten
1/2 cup bread crumbs
1/3 cup fresh parsley, minced
2 tablespoons mayonnaise
1/2 teaspoon Old Bay seasoning
cayenne pepper
onion powder for sprinkling
olive oil for frying

In a medium bowl, toss together bread crumbs, egg, old bay seasoning and mayonnaise until moistened, but do not over mix.

Add salt and pepper.

Form into five or six cakes, 1/2 to 3/4 inches thick. Place in refrigerator on cookie sheet for at least one hour so they will set up. Sprinkle lightly with cayenne and onion powder.

In a heavy skillet, fry crab cakes in olive oil, turning once until both sides are nicely browned (about 10 minutes).

are those the same as 'deviled crab'? I used to buy some frozen 'deviled crab' things and OHMY did I love 'em!
