Letter of the Week Recipes ~* K *~

This weeks letter of the week is ~*~ K ~*~
kiwi, kale, kidney beans, kielbasa, ketchup, kalamata olives, kettle corn, knockwurst, khalua, kale
anythink from kabobs to key lime pie or kansas city bbq to kosher.
Kentucky Hot Brown
1/2 c butter
6 Tbs flour
3 c milk
1/2 c freshly grated Parmesan cheese, divided
1 egg, beaten
salt and pepper
1 Tbs butter
2 c mushrooms,sliced
1 tomato, thinly sliced
1 lb thinly sliced cooked turkey
8 slices bread, toasted
8 slices bacon, cooked
Melt 1/2 c butter over med heat. Stir in enough flour to absorb butter. Slowly whisk in the milk,
and 6 Tbs Parm cheese. Stir in the egg to thicken the sauce, but don't let boil. Remove from heat,
season w/salt and pepper.
Heat rest of butter in a small skillet,saute shrooms til soft. Set aside.
Preheat broiler.
For each Hot Brown, place two slices of toast onto a heatproof plate or dish. Cover toast w/1/4 c
mushrooms and a couple of tomato slices. Place a good amount of turkey onto each , and pour an
a good amount of sauce over. (Smother it good)Sprinkle w/rest of cheese.
Broil til the sauce is speckled brown and bubbly. Remove from broiler, criss-cross two slices of
bacon on top, and serve!

Key Lime Pie

1 lg. pkg. cream cheese
1 can sweetened condensed milk
1/2 c. lime juice
1 container Cool Whip
-Set out cream cheese until very soft; beat in condensed milk.
-Gradually beat in lime juice. Fold in 1/2 of Cool Whip.
-Pour in pie crust and refrigerate.
-Put rest of Cool Whip on top before serving.
-Refrigerate 4-5 hours or overnight.

Kielbasa N Pasta

16 oz dry ziti pasta
1 lb Kielbasasausage, sliced
2 Tbs oil
3 (14.5)italian-style stewed tomatoes
3 (8oz)tomato sauce
1 tsp oregano
1/4 c chopped fresh parsley
1/2 tsp pepper
1/4 c Italian style breadcrumbs
8 oz shredded monterey jack cheese
Preheat oven to 350.
Cook pasta 8-10 min.
Cook sausage in oil til browned on both sides.
Mix Ziti,sausage,stewed tomatoes,tomato sauce,oregano,parsley and pepper.
Pour into 9x13.
Sprinkle w/bread crumbs and shredded cheese.
Cover with foil (sprayed w/pam)
Bake 30 minutes.
Remove foil and bake 10 to 15 minutes more,til top is golden. :happy dance:

1 lg. head cabbage, grated
1 sm. onion, grated
4-5 carrots, grated
DRESSING:
1 c. Miracle Whip
1/4 c. oil
Dash celery salt
3/4 c. sugar
1/4 c. tarragon vinegar
-Mix Miracle Whip and sugar. Add other ingredients and mix well.
-Pour over cabbage mixture and mix.
-This is good made the day before.

2 lbs kielbasa sausage, cut into 1 in pcs
1 (12oz) beer
1 (20oz)sauerkraut, drained
1/2 an onion chopped
1 tsp minced garlic
1/2 Tbs caraway seeds
(an apple optional  )
Mix all and cook on low 5-6 hours.

Key Lime Cake

1 lemon or white cake mix
1 (3oz)instant lemon pudding
3/4 c water
1/2 c veg oil
4 eggs
7 Tbs key lime juice
1 1/2 c powdered sugar
3 Tbs key lime juice
Preheat oven to 350
Grease one 9x13 or 10 in bundt pan.
Mix cake mix,pudding, water, oil, eggs, and 7 Tbs juice, mixing well. Pour batter into pan.
Bake 45 min.
Pour key lime glaze over cake while still warm.
Glaze:
Mix powdered sugar and 3 Tbs juice (more if nec)

Kate's Famous Fudge

2 cups brown sugar
¾ cup of milk
2 tbsp butter or margarine
1 tsp vanilla extract
2 tbsp corn syrup
½ cup chopped nuts (optional)
Add all ingredients, except walnuts, to a saucepan and cook at medium heat, cooking to soft ball stage. Soft ball stage is when fudge forms a ball when a small amount is dropped into a glass of water. Add nuts, if using.
Remove from heat and beat until very thick. Pour into greased pie plate and let stand until cool.
Way back when I was a Girl Guide, whenever we went on a trip I would be begged to bring this. I've been making this recipe for over half my life (found it when I was about 9 and I'm 21 now).

Korean Spicy Chicken N Potato Stew

2 1/2 lbs chicken drumettes
2 large potatoes,large chunks
2 carrots, cut into 2 in pieces
1 large onion, cut into 8 pieces
4 cloves garlic, crushed
1/4 c water
1/2 c soy sauce
2 Tbs sugar
3 Tbs hot pepper paste
Over med heat, mix chicken, potatoes, carrots, onion, sugar, and garlic. Pour in water and soy sauce, and stir in sugar,hot pepper paste.
Bring to a boil, reduce heat to low, and simmer 45 min,til chicken is done, veggiestender, and liquid has thickened.
