Wave What are things you make in the spring to keep in the freezer through the summer?

So you do not have to heat up your oven?

I will be making a few batches of home made pepperoni.Proably 2 batches so I will have 8 logs.It will not last us but a couple months but we can still enjoy it during the summer and not heat up our oven through the summer.

What are things you like to make ahead of time?

I like to make some freezer pies!!

It's nice to just set out a great dessert on a hot day.

As I find good deals on strawberries I mix up small batches of chopped/pureed and keep in the freezer for quick straw/shortcakes.

I also like to freeze some of the bone/skinless chicken breast in rub...that way when Im working in the yard or something all I have to do is set it out and it's already seasoned and ready to hit the grill.(Pull out a frozen pie and slap some plastic wrapped potatoes in the microwave...it's a meal in minutes)

I freeze chicken breasts and steaks already marinated - just pull them out, thaw, and toss on the grill.

Could you two share your marinades for the steaks and chicken breasts that you put the meat in and freeze it?

2 Tbs Spanish Paprika
2 Tbs Ancho Chili Powder
2 Tbs dry mustard
2 Tbs dry oregano
2 tsp dry cumin
2 tsp dry coriander
1/2 tsp cayenne pepper
1 Tbs salt
1 tsp pepper


Whisk spices together.


chicken(or pork also)
______

1 Tbs pepper
3/4 Tbs kosher salt
3 Tbs chopped fresh rosemary
1 Tbs dried rosemary
8 cloves garlic, diced
1/3 c olive oil

Mash together to form paste and rub into chicken or pork .

I know this sounds very Martha Stewart...but I also like to make up some cutesy ice cubes....ex-I just froze the last little bit of lemonade in the pitcher from monday into cubes w/2 raspberries in each.

Silly,I know....but sometimes when ya just need a BREAK...a simple little thing like a pretty drink can help.
