Default 40 lbs of Asperagus

You read that right.. I picked up 40 pounds at the local veggie stand yesterday. I cut and par boiled and quick froze 1/2 of it. I am going to leave some in spears to freeze and grill later. Of course were going to eat some now too...


How do you prepare it? Grill, steam or boil? What seasonings do you like on it..

I like mine with hollandaise, but I just found a recipe that called for drizzling it with balsamic vinegar and roasting it. Can't wait to try that! I've also seen a lot of casserole type recipes that call for asparagus.

I did that once but learned that I do not care for frozen asparagus. So I just buy it up and eat it up when it's fresh.

I pour balsamic vinegar over it, sprinkle with salt and pepper and then broil it for a few min ... mmmmm

I put it in the oven at 400 with olive oil and salt and pepper. It takes anywhere from 5 to 15 minutes (depends how thick it is and how crisp you like it). It's great this way. Also, steam for a few minutes, about 2 or 3, then put in ice water to stop cooking. Mix a few tablespoons of red wine vinegar, olive oil, dab of dijon mustard. pour over and sprinkle with fresh parmesan. Just don't go out an buy an asparagus pot! I did and I never use it. Just one more cooking tool that I need to get rid of.....
