Anyone ever done something like this? Was/is it successful?

Tomorrow me and two of my friends are getting together and cooking for the week. We each are making one meal that we can freeze. We have to buy enough ingredients to feed 12 people. Then we make everything and put into containers to bring home and freeze for the week.

Does anybody have any good recipes or ideas? I think that I am going to make Chicken Enchiladas.

I just wanted say that we did this yesterday and I think that it was a huge success! I bought for 12 people and the total was about $25. We made Chicken Enchiladas, Lasagna Casserole and Manicotti. I have enough food for 3 full dinners and probably a couple of lunches. Plus we had left over enchilada mix that we split and put into baggies to freeze. All in all a great turnout!
We are going to try and do this every weekend. I definately recommend it if you can!

ETA: Thank you araefinn for the GREAT Chicken Enchilada recipe!

3lynns, you are soooo welcome! I get so excited when someone tries a recipe of mine. Let me know what you think if it.
