I don't buy fresh herbs a lot of the time. In general, I leave out expensive ingredients or substitute, rather than not make a recipe I love.

I use walnuts in pesto because they are cheaper and I like it more.

I don't use fresh herbs. I will use what I have on my spice shelf. I substitute white sauce a lot for the cream of chicken/mushroom soup.
