Does someone here have a good recipe for a white sauce? If so, can you give me a little step by step on how to make it? DH would really like me to learn to make biscuits and gravy. I just can't seem to accomplish this particular thing. Thanks!

A white sauce?? Hmmm, I heat up some milk or cream with chicken base, garlic, salt and pepper, and butter, then when its hot I thicken with cornstarch and water mixture. Oh add some parm to that too.

Is that what you are looking for?

Gravy for sausage, pork chops etc is really easy to make. Takes a bit of practice though, so don't dispair! Try it a few times til you get the hang of it...a white roux is just approximately equal parts fat/pan drippings and flour.

When you are done cooking the meat...remove it to drain on paper towels or whatever. You can put it in a tray and stick it in the oven to keep it warm. Whatever works for you.

Then, use the fat in the skillet (pour off some if you have a ton of it)...sprinkle some flour over the fat and use a whisk to make a smooth paste. Heat it over med/high heat to cook it. I stir mine constantly and don't leave the pan unattended. It can go from perfect to burnt in a short period of time. Whisk the flour/fat mixture for several minutes over the heat...I don't time myself, but maybe 4 to 5 minutes? You're just cooking the flour, so if you don't do it long enough, the gravy will have an uncooked flour 'taste' to it. Then, slowly add milk, keep whisking...until you've reached the consistency you like. The bits of meat on the bottom of the pan is where the flavor is...so make sure you're scraping that up as you make the gravy. Salt and pepper to taste.

Once you get the basic gravy down...you can taylor it to your taste. Sometimes I use worchestire sauce in mine etc

Good luck!

Oregano,

Thanks so much for the links! What you described is exactly what I'm looking for. Although I have to say the idea of not having to mix it all separately like in that 1st link, it quite tempting!
