Here's a quick easy menu idea from our own Mod RyansMom_10



Appetizer-

~Torta California~


2 8 ounce packages of cream cheese,softened
1 8 ounce package of goat cheese
1-2 garlic cloves(The more the better)
2 tablespoons olive oil
1 teaspoon dried thyme leaves,crushed
3 tablespoons pesto,well drained
1/3 cup roasted red peppers,drained and chopped(I get these at the dollar store)

Line 1 quart souffle dish(Any round type of dish will work fine) or loaf pan with plastic wrap.Place cream cheese,goat cheese and garlic in food processor or blender container,process until well blended.Add oil and Thyme,blend well.Place one-third of cheese mixture in souffle dish,cover with pesto,half of remaining cheese mixture and top with the peppers and then the remaining cheese mixture.Cover and chill.

Unmold,remove plastic wrap.Smoothe sides,Garnish with fresh herbs and additional red peppers if desired(Makes it look pretty).Serve with assorted crackers or french bread.

Makes 3 cups.


~California Burger~

2 T. honey dijon mustard
2 T. gourmayo sun dried tomato mayonnaise
2 T. sour cream
1 pound of ground beef
2 T. worcestershire sauce
1 1/3 C. french fried onions,divided
1/2 t. garlic salt(I use garlic powder)
1/4 t. ground black pepper
4 hamburger buns toasted
1/2 small avacado sliced
1/2 cup sprouts

Combine mustard,mayo and sour cream.Set aside.Combine burger,worcestershire,2/3 cup french fried onions and seasonings.Form into four patties.Grill over high heat until juices run clear.

Place burgers on rolls.Top each with mustard sauce,avacado slices,sprouts and remaining onions,dividing evenly.Cover with top half of rolls.

~Easy Baked Beans~

1 large can of pork and beans
1 can of kidney beans,drained
1 can of butter beans,drained
1 cup chopped onion
1 cup catsup
1 cup brown sugar
1/2 pound cooked bacon crumbled

Mix all ingredients in large bowl.Bake at 350 until thickness desired.I let them go for a long time.Just keep an eye on them and stir them so they don't stick.

~Chocolate Mint Truffles~

1-10 ounce package of mint chocolate chips
1-6 ounce package of semi-sweet chocolate chips(1 cup)
1-14 ounce can of sweetened condensed milk
finely chopped nuts,flaked coconut,chocolate sprinkles,colored sprinkles(My favorite and chocolate ones),unsweetened cocoa or colored sprinkles

In heavy saucepan over low heat,melt chips with sweetened condensed milk.Chill 2 hours or until firm.Shape into 1 inch balls,roll in any of the above coatings.Chill one hour or until firm.Store in covered container and room temp.

Every one thinks you spent a long time in the kitchen and as you see you don't and it is so easy and SO good!

Congrats. on Recipe OTW, they all sound so good, I have had something very similar to the Torta California it was made with a couple of different ingreds., but it was quite good.
I will definately have to try the truffle one, my 2nd secret indulgence!!!

What were the ingredients you had that were different in the torta?I am always up for something new to try.

I love truffles and used to get them at the candy store in the mall but that got expensive.So doing these you get more,easy and Cheap.Let me know if you try them what you think of them.
