I don't have to do it very often, because we go through peppers here like crazy - both Dh and the kids love them. What I do is dice them and measure them out and seal them in baggies and put them in the freezer. That way I know - okay this baggie has 1 cup of diced green pepper or this bag has 1 whole diced pepper...just helps me when I am looking to defrost. I have never eaten the defrosted peppers raw - I use them in sauces.

Wash them, dice them, toss them in baggies, date the baggies, and toss in the freezer.

I, too, do not eat them raw after I have frozen them but I do cook with them.

I do it the same way and if they stick together after frozen I will hit the bag of them against the counter and they break apart really easy.
