I swear by this recipe. Even people who hate meatloaf have liked it.

Tantalizingly Tangy Meatloaf - Allrecipes

I use apricot jam in place of the pineapple preserves and will use oatmeal if I don't have bread crumbs on hand. It turns out fine either way. (Trust me, don't skimp on the sauce. That's the real secret to it.)
I also add chopped onions to mine.

I dont measure anything when I throw my meatloaf together. Here is it:

hamburger
about 1/2 chopped onion
salt and pepper
garlic powder
Worchestshire (sp?) sauce-probably about 4 tablespoons
1/2 cup or so of homemade breadcrumbs-breadcrumbs have Italian seasoning it in.
One block of swiss cheese-sliced

Mix everything together except the cheese. Than layer meat, cheese slices, meat, etc. I usually get about three layers of meat and two of cheese-end with a meat layer. Than bake. My kids love cheese so they really like the cheese layered in with the meat.

Don't measure anything
about 1 1/2 of ground beef
onion
fresh garlic
Italian bread crumbs
worchestershire
egg
a little BBQ sauce

I somethime put it in a loaf pan but most of the time I make patties and we eat it like hamburgers.
