I thought for a few weeks we'd go back to basics.....
so we're gonna do a run through of all the basic staples we almost all have in the kitchen.



We all have a bag of flour in the house usually.......

what do you do with it


bread?
homemade cakes?
coating?(if so do you add anything to it?)
gravy?

When I make gravy I always use the cornstarch/water slurry.....EXCEPT for sausage and hamburger gravy...flour is just the only way to go with these 2 meats......

Sausage Gravy

1 lb Sausage Roll
1/4 c flour
2 c milk
Salt and black pepper to taste

Crumble and cook sausage in large skillet til browned.
Stir in flour til dissolved. Gradually stir in milk.
Cook til thick and bubbly. Season w/salt and pepper.
Serve hot over biscuits or toast. :happy dance:

Hamburger Gravy

2 pounds lean ground beef
1/2 onion, finely chopped
5 c milk
2 Tbs chicken bouillon granules
2 Tbs butter
1 tsp ground sage
salt and pepper to taste
1/2 c flour
1/2 tsp granulated garlic


Cook and drain beef(leaving just enough grease to coat the pan)
Add the onions, and cook for a few more minutes.

Pour 4 c of the milk into the pan, and stir to scrape up any bits from the bottom of the pan.

Mix in the bouillon, butter, sage,gran garlic, salt and pepper. Bring to a boil, and cook for 5 minutes, stirring constantly.

Mix the flour into the last cup of milk til smooth. Slowly pour into the skillet, stirring constantly. Simmer for a few minutes to thicken. If the gravy is too thick, thin with a little bit of milk. If it is too thin, simmer longer, or add more flour.

Taste and adjust seasonings before serving.

Great w/mashed potatoes and green beans

2 tsp garlic powder
1 tsp pepper
1 tsp season salt
1 tsp paprika
1/2 tsp dill
1/2 c bread crumbs
1 c flour

Just mix all......and use as usual after egg wash....of buttermilk soak


This is great for your usual friend chicken or even pan fried in a little butter.
And you can always also toss in a handful of parm cheese

I mix my whole wheat and my all purpose flour together to make things healthier. I am trying to go to all whole wheat. I also have bread flour.

I make regular bread
Quick bread
Muffins
pancakes
pie crust
biscuits
cookies
cakes

We go thru a lot of flour around here. I don't buy many pre-packaged snacks anymore.

I am going to have to try making gravy. I don't do that very well.

I also make crumb coating for chicken etc. I just don't measure the ingredients.

I mix flour with some garlic powder, fresh cracked black pepper, chili powder, onion powder, very little salt, paprika, parsley flakes.

I use the egg wash dip in the flour mix, dip in buttermilk and then dip back in the flour mixture.

Make your own....self rising flour

Mix:
1 ½ tsp baking powder
½ tsp salt
per cup of all-purpose flour.

Make your own .......Cake Flour


To sub cake flour for all-purpose flour use 1 c plus 2 Tbs cake flour for every cup of all-purpose flour.


or make your own -
1 3/4 c flour
1/4 c cornstarch

Make your own.......Pastry Flour


To make 2 c of pastry flour:

Mix:
1 1/3 c all-purpose flour
2/3 c cake flour

(great for pies)
