As budletsmom pointed out in the crock pot section,alot of the crock pot recipes ARE on the heavier side...what's your fave lighter fare in the crock pot that you make during summer months??

Here is one I like it's simple:
country style pork ribs(boneless) and a bottle of BBQ sauce. Cook on high 4 hours.
Wicked good!
I like to serve it with potato salad and corn on the cob

This is awesome w/out having to roast a whole pig



1 (6lb) pork butt roast
1 1/2 Tbs Hawaiian sea salt (black is awesome if ya have a trader joes)
1 Tbs liquid smoke flavoring



Pierce pork all over w/carving fork. Rub salt then liquid smoke over meat. Place roast in a slow cooker.
Cover, and cook on Low for 16 to 20 hours, turning once during cooking time.
Remove meat from slow cooker, and shred, adding drippings as needed to moisten.

I cant think of any recipe that isnt so heavy. I will have to do some serious thinking on this one.

Crockpot Barbecued Beef

1 1/2 cups ketchup
1/4 cup brown sugar
1/4 cup red wine vinegar OR cider vinegar
2 tblsp Dijon mustard
1 tblsp Worcesterhire sauce
1/2 to 1 tsp liquid smoke flavoring, to taste
1/2 tsp salt
1/4 tsp ground black pepper
1/4 tsp garlic powder
boneless roast, about 4 pounds or so


Combine ketchup, brown sugar, vinegar, Dijon mustard, Worcesterhire sauce, and liquid smoke in a bowl. Stir in salt, pepper, and garlic powder. Place roast in slow cooker; pour mixture over the roast. Cover and cook on low for about 8 to 10 hours, OR until done. Remove roast from slow cooker and shred with a fork; return to slow cooker, stir, and continue cooking for about 1 hour longer. Serve on hamburger buns.


OK, here is why I call it a double whammy. When I make this in the cooler months, I serve it as a regular roast with mashed potatoes, gravy, and veggie. In the warmer months, you can shred it like the recipe says, and serve it on hamburger buns. Another thing, with my cooker, I have never needed to cook it as long as the recipe states and the meat was thoroughly cooked. Also, I have never added the liquid smoke and it is still delicious. I do intend to try it though...some day.

fiesta chicken

This is so easy and makes the best shredded chicken for tacos, taco salads, quesadillas, and nachos!


4-8 oz boneless skinless chicken breasts
2 cups water
1 pkg fajita or taco seasoning mix
1 can diced tomatoes with green chilis

Turn crockpot to low. Mix together water and taco seasoning and pour in crockpot. Place whole chicken breasts in crockpot. Pour entire can of tomatoes over chicken. Cook for 8 hours on low or 4 hours on high. Chicken is done when it is easily shredded (most of the broth will have been soaked up). Using two forks, shred chicken and mix well. You may add additional tomatoes if desired.

Chicken in the Crockpot

chicken breasts or pork chops
dry onion (or other flavor) soup mix OR dry salad dressing mix (I use Good Seasons light italian)
aluminum foil

1.one chicken breast per square of foil
2.sprinkle with the dry mix - as much or little as you like
3.wrap as little foil packets
4.layer in crock pot - do not add any liquids
5.cook on low 8-10 hours
6.comes out moist and juicy and yummy

I usually do 4-6 breasts at a time and save the extra dry mix in a zip bag for next time.

Questions...

for the pork ribs aren't they greasy?

for the chicken...do you wrap the breasts in the foil? and can you use other boneless skinnless pieces too?

Both sound yummy and I'd like to try them this weekend for a group!

I like to dump a bottle of BBQ sauce on just about any meat for my summertime favorite crock pot meal. Tonight I am making a tenderloin in my crock with some BBQ sauce.
