......ooooohhhhh.......here's a good one.......quesadilla......oh wait another one.........queso dip......great "Q" might not be a total loss after all


How about quick?Sooner or later the rain is bound to stop and the heat is gonna hit.....(at least I certainly hope)then were gonna need some quick dinner ideas.

1/4 c mayo
2 tsp diced canned jalapeno peppers
2 tsp juice from canned jalapeno peppers
1/2 tsp cumin
3/4 tsp sugar
1/2 tsp paprika
1/8 tsp cayenne pepper
1/8 tsp garlic powder
dash salt

Pulse all in processor for about a min.....and voila.......addictive

4 eggs
12 slices bacon, crumbled
1/3 c. chopped onion
1/3 c. chopped green pepper
2 c. milk
1 c. Bisquick
1 c. grated Swiss or Cheddar cheese
1/4 tsp. salt
1/8 tsp. pepper

-Grease 8" pie or square pan.
-Sprinkle bacon, cheese and onion in pan.
-Beat eggs, add milk, Bisquick, salt and pepper with electric mixer until smooth. Pour in pan.
-Bake at 400 degrees for 40 minutes or until knife comes out clean.
-Let stand 5 minutes before cutting.
-Garnish with more bacon if like.

1 1/2 Tbs vegetable oil, divided
1 green bell pepper, sliced
1 red bell pepper, sliced
1 lb med shrimp - peeled and deveined
1 c chopped onion
1 pkg taco seasoning mix
3 Tbs water, or as needed
6 (10in) flour tortillas, warmed

Heat 1 Tbs oil over med-high heat.
Saute peppers, and onion,stirring alot til peppers are still slightly crisp,about 5min. Remove,set aside.

Add last of oil into the skillet, and add the shrimp, stir occasionally til pink and opaque.

Reduce heat to low,add peppers back in and onion.

Stir in taco seasoning and water so that everything is evenly coated. Simmer til peppers are heated.

Serve in tortillas.

1 1/2 c sugar
3 tsp cinnamon
oil for frying
10 flour tortillas

Mix sugar and cinnamon.

Heat 1/2 in of oil.

Place one tortilla at a time in skillet, Cook for a couple of seconds,turn and cook another few seconds,til browned(like maybe 10 seconds-these quick FAST).

Toss in sugar mix,turn to coat.

For as fast as these are they are a great quick fix when youre in the mood

Easy Broccoli Quiche

2 tablespoons butter
1 onion, minced
1 teaspoon minced garlic
2 cups chopped fresh broccoli
1 (9 inch) unbaked pie crust
1 1/2 cups shredded mozzarella cheese
4 eggs, well beaten
1 1/2 cups milk
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon butter, melted

DIRECTIONS
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Over medium-low heat melt butter in a large saucepan. Add onions, garlic and broccoli. Cook slowly, stirring occasionally until the vegetables are soft. Spoon vegetables into crust and sprinkle with cheese.
  3. Combine eggs and milk. Season with salt and pepper. Stir in melted butter. Pour egg mixture over vegetables and cheese.
  4. Bake in preheated oven for 30 minutes, or until center has set.

great for parties!!

1 lb Sausage Roll (or you can use hamburger)
1 (8oz)velveeta , cut up
24 slices cocktail-size rye bread
3 small fresh tomatoes, chopped


Preheat oven to 350.


Cook n crumble sausage.
Add cheese too sausage. Stir til melted. Remove from heat.
Spread mix on rye bread. Place bread on a baking sheet.
Bake for 5 min,til bread is toasted.
Remove from oven,top w/tomatoes.
