If you didn't already with the flour thread...now is a great time to grab an index card and make some notes to keep in your recipe box)


Okay........from flour...we're heading to sugar

White sugar we always have......but on the off chance you get a cool day and decide to bake maybe.........ugh...you're out of brown sugar.

No Problem!!!

Make your own.....it's simple


~~Light brown sugar~~
1 c white sugar
1 Tbs molasses

Mix well with a fork.


For ~~Dark brown sugar~~

just increase the molasses to 2 Tbs

Cinnamon-Sugar
1/2 c sugar
2 tsp cinnamon


Cinnamon-Flavored Sugar

(a little different cause it stays white and is more subtle tasting)
Just put 3 cinnamon sticks in a 1 lb bag of sugar for 2 weeks(stir 1 or 2 times a week)

Chocolate-Cinnamon Sugar
(great broiled on toast for kids)
Mix:
1 Tbs unsweetened cocoa powder
3 Tbs sugar
1/2 tsp cinnamon.
Store in airtight container.

mmmmmm! I am absolutely trying the Chocolate-Cinnamon Sugar. Cinnamon toast is a reg. inexpensive treat around here and that would change it up a little.
I put so much sugar in my coffee and pretty much drink Sweet Tea with all my meals so sugar is always in my pantry.

~powdered sugar~


Just put:
1 c white sugar
into a blender and pulse til it's "powdery"

~TIPS~
If you just need a small bit to dust a cake etc.......just toss a few Tbs into a coffee grinder

The white sugar is grainy and can leave scratches on a plastic blender(so keep that in mind in case your blenders pitcher isn't glass)

Corn starch(and other things)are used in store bought pd sugars,so,if you're not getting quite the flavor you need,try adding 1- 1 1/4 Tbs corn starch for each 1 c of sugar.

~Light Corn Syrup~

2 C. sugar
3/4 C. water
1/4 tsp cream of tarter
Dash of salt


Mix all in heavy saucepan over med heat,stir constantly til it comes to a boil. Reduce heat to low, cook til it reaches 230-240 F on candy thermometer. Cool completely.


(Can be stored up to 3 months).

These are great to flavor drinks or certain baked goods or even to give as gifts.

Here's some general ideas....

put:

1 c sugar

in a ziploc bag with some:

Vanilla Beans
Zest of 1....Lemon...Lime...or...Orange zest
or Mint Leaves

Let sit 1- 1 1/2 weeks.
Sift sugar to remove all zest etc.


Store in an air tight container.


Or try....

Pulse 1 Tbs cocoa,pinch of salt and 1 c sugar in processor til light.
(great in cappucchinos)

Grind 1/2 tsp cinnamon, 1/4 tsp cayenne pepper, 15 drops red gel food coloring and 1 c sugar.
(Good on sugar cookies and in coffee)

1 c water
1 c sugar

Boil til sugar disolves and let cool.

Simple syrup is the only way to go when making homemade lemonade.

But you can also flavor it with.....vanilla,almand,whiskey,other liquors to brush on cakes also.(Helps to keep it nice n moist)

1 c sugar
1 c brown sugar
1/4 c corn sryup
1 c boiling water
1 tsp maple flavored extract

Cook on med heat and let lightly boil about 10 min then let cool.

*NOTE*
You can also add 1/2 tsp butter flavoring too.

great on cinnamon rolls or cakes...

1 1/4 c powdered sugar
3 Tbs milk

You can also tint this w/food coloring to pretty up angel food cakes n stuff.

this is really fun when you're baking w/the kids....or baby showers n stuff...

1 c sugar
and start with 3 drops any color liquid food color,more of course depending on how dark you want the color.

Mix in a jar and let the kids shake!!

This is really cool considering the price of colored sugar
