Dh and the boys went fishing today and caught some rainbow trout. Kids cant wait to eat them. I usually cook fish like that in a dipped in a little corn meal and than fry them up. Anyone else have any recipes for cooking them any other way. I think we would all like them without a heavy batter on them. What sides do you make to go along with your recipe?? I was just gonna fry up some potatoes, add a veggie and salad. TIA!

I think trout is best served up pretty basically(for fish anyway)

Mix up:

1 finely minced clove garlic
1 Tbs chopped fresh rosemary
1 lemon zested and the juice of 1/2 of it
couple shakes of salt n pepper
1 Tbs olive oil

line your pan w/foil and oil it.
Lay on fish...top w/mix and broil.

(just be cauutious to not burn the herbs)

Very very good!!!

I have used ground pecans instead of corn meal. It's yummy.
