After seeing the post about summer sandwiches, I'd really in the mood for egg salad sandwiches.

My hard boiled eggs never turn out right and I see so many methods on the internet.

So, my dummy question today is how do you hard boil eggs so they don't have that green edge and peel nicely???

PS. I buy the extra-large eggs.

Green means you boiled them to long. I boil my for about 10 to 12 minutes and I use old eggs. I buy them and put them in the back of the ref for a week then boil them.

I out them in cold water to cover by about an inch, dash of salt....bring to a good hard boil, remove from heat, cover and let sit about 20 min.

Ans she was right.....the green is fine, just means ya boiled em too long.

run under cold water a few minutes and peel(they are harder to peel if you refrig before peeling)

I use this method....Cover cold eggs in cold water by an inch or so and bring them to a boil. Turn the heat off and set a timer for 12 minutes. Then I rinse the eggs in cold water and sometimes put ice in the water to cool them off quicker. I also agree with angelhair that older eggs will peel much easier than newer eggs. This method makes beautiful hard boiled eggs without the green or gray line around the yolk.

I put mine in cold water, cover, bring to a rolling boil and then take off the heat and leave covered for 16 minutes. Always turns out perfect with no green or grey!

There are a lot of different methods...this is how I do mine:

I put the eggs in a saucepan and cover them with water from the tap. Put the pan on the stove and heat to "High" to bring them to a boil. I lower the heat to med or so - so that it's simmering and set the timer for 10 minutes. When the timer goes off, I drain off the hot water and fill the pan with cold water from my fridge and few ice cubes too. I let the eggs sit in the cold water for a few minutes and then I peel them. I don't have a problem peeling them (although really fresh eggs are harder to peel than older ones) or with green yolks.

Good luck!

They also make hard boiling appliances. I have one that was small and cheap (like 6-7 bucks) and you just put the eggs in, press a button and walk away. It times them and shuts off when their done. Works great, and with the amount of eggs we hardboil a week (almost a dozen), it's worth the small investment.

This is a true story and you will crack up.

My girlfriend and I were chatting on the phone and she said 'oh crap' then would keep talking a few moments later 'oh crap'... so I asked her what are you doing?

She was boiling eggs for her dd's to color for easter... she boiled the water, put the egg on a wooden spoon and lowered into the pan of water.. Upon touching the water the egg would crack.. there for 'oh crap'...

I laughed and laughed... She tried 10 eggs this way... So I told her the Betty Crocker way, cold water, bring to hard boil, remove from heat let sit 12 minutes... drain and refill pan with cool water....
