My FIL grills london broil and it is tender. Every time I make it, it is VERY tough. Any tips? Usually I "tenderize" it with a fork and tenderizing powder and then put a steak rub (usually Emeril's) on it (per his suggestion). The flavor is good but the texture isn't. DH and I can't seem to figure it out. Help!!!

Don't worry about the typo in the title.I did not notice it until you mentioned it.

I have suggested for this but I am sure some one will have an answer for you.I have never made one before.

When we do our london broil. I usually just do a dry rub. Let the meat ALMOST come to room temp ( I really don't like leaving it out for too long) and then I put it on the grill at a high temp. and seer (sp?) the outside and once that is done, I slow cook it on low until desired done-ness.

I marinate it in (zesty) Italian dressing (overnight is AWESOME if you have the time) but even just for a few hours in the fridge does the trick. It always comes out tender
