That is something I have posted...

I use canned veggies. Depending on what your family likes and how much you plan on making... I open and dump, using the liquid off the veggies as my soup base. Cut your left over roast into bite size pieces and add to it.. Simmer until hot and serve. Quick and Easy.. You can serve with corn bread or dinner rolls too.

1 can peas
1 can corn
1 can carotts
1 can green beans
2 can potatoes (I used the whole and cubed them)

I do this all the time in the winter if we have any lo roast from a meal. I just dump the roast (cut up into smaller pieces) and any lo gravy too, into the crock pot. Than goes all the veggies and other goodies: frozen corn, baby carrots, canned green beans and peas and sometimes some barley. Add any spices or beef boulion as needed and there's dinner. MMM hot rolls do go along great with some hot soup.
