My gf and I went blueberry picking yesterday in Paw Paw Michigan at Leduc's... They have a variety called Spartan.. They are dime to nickle size (BIG) and sweet....

I picked 12 lbs.. 3 of those little buckets full for those that blueberry pick.

I'm looking for different recipies than what I usuallly make.. Come on gals.. help me out.. What is your favorite??

ooooooh man...fresh blueberries are one of my favorite!!!

We have a local farm that gets the BIG fat ones too......love those!!!

I make a TON of stuff....

muffins
quick bread
buckles
trifles
ice cream
sauce for waffles etc
smoothies
jams

mmm mmm mmm I envy you!!!

a few thing I do a little different is make a rhubarb n blueberry jam(let me know if you want the recipe)

Blueberries are also great in cornbread muffins,or you can make a blurberry upside down cake...yummy(great w/lemon cake or a white w/some almand extract added)or you can make a regular pineapple upside down cake and sub bluberries for cherries



BLUEBERRY FRENCH TOAST
~~~~~~~~~~~~~~~~
1 (1lb)Italian bread,cubed
1 (8oz)cream cheese, diced
1 c blueberries
12 eggs
2 c milk
1/3 c maple syrup

1 c sugar
2 Tbs cornstarch
1 c water
1 c blueberries
1 Tbs butter


Put 1/2 the bread cubes in a lightly greased 9x13
Sprinkle w/cream cheese
Top w/1 c blueberries and rest of bread

Beat eggs, milk and maple syrup. Pour egg mixture over bread. Cover pan and refrigerate overnight.
(I also usually add a splash of vanilla or almand)

Remove from fridge 1/2 an hour before baking.

Preheat oven to 350

Cover w/foil and bake 30 min.
Uncover and bake for another 30 min,til golden brown and center is set.


Sauce:
Mix sugar,cornstarch,water.
Boil over med 3 min, stirring constantly.
Stir in blueberries ,simmer 8-10min,til the berries pop.
Stir in butter til melted.

Serve over french toast.

Kinda reminds you of a danish

OK M2M!!! I want the blueberry and rhubarb jam recipe, but only if it is easy! I am not good with jam!! :P

BTW, I am going to have to try this french toast recipe - sounds fab!!

The jam is super easy cause you can either water bath and can it or just freeze it


Blueberry Rhubarb Jam
~~~~~~~~~~~~~~

8 c chopped fresh rhubarb
2 1/2 c sugar
1 (21oz)blueberry pie filling
1 (3oz)strawberry jello
1 (3oz)raspberry jello

Mix rhubarb, sugar and pie filling,bring to a rolling boil over med-high heat, and boil for 10 min more.

Stir in dry jello til dissolved.

Transfer to sterile jars or freezer containers,cool,and freeze.

(or water bath 10 min)

Blueberry Pie Filling
~~~~~~~~~~~~

4 c fresh blueberries
1 c sugar
3 Tbs cornstarch
1/2 tsp grated lemon peel
1 c water
2 Tbs lemon juice

Mix sugar and cornstarch in saucepan.
Add water slowly,whisk.
Bring to a boil, add blueberries and cook 3-4 min til clear and thick, stirring constantly but don't crush berries(use a spatula).

Remove from heat, add lemon juice.

Let cool and use in place of store bought pie filling.
