Hope2 has me totally craving blueberries

This reminded me that I need to up the ante on what I freeze this year.
(nothing worse than getting the jones' in the dead of winter and having run out of stash)

I have already froze some raspberries and strawberries. But have yet to hit the blueberries.

My Grandma use to freeze canteloupe.

You all freeze anything?

I never have, but I have never thought too. We NEVER get any good sweet strawberries here. All summer long they are crunchy and not sweet at all. So I figure I can buy the ones already frozen. Raspberries are too expensive to buy, one little container (not even one cup) is usually over $3.50.

I freeze lots of fruit. I just finished with some blueberries and cherries that I bought in bulk from our local bulk food store. Probably next will be peaches. In the fall, lots of apples from our trees.

To freeze berries, I wash them and dry them off on kitchen towels. Then I lay them out on a single layer on a cookie sheet and freeze until they're hard (I usually do this part overnight). Then I just place them all in a ziploc in the freezer - they're frozen at this point, so they don't stick together. I like this system, because I can just pull out the amount I want from the bag. They're also great for smoothies this way, because you can just take out a handful of the frozen berries and don't need ice cubes.

I did a bunch of strawberries...but I've been chowing on them so that isn't going to last long! My raspberries are coming on, but I've been eating them as I get them, so I'll have to hit the farm market for some or something!

here's the secret to blueberries..

don't wash them (the skins get tough if you do) quick freeze them on a cookie sheet over night then store in plastic containers (I use Peanut Butter jars because they stack so well)

Strawberries~

I mash them and put them into containers then when needed I thaw it out and add my sugar for shortcake.

Peaches~

I get them when they are still firm. then I slice, quick freeze and then put into plastic containers.

Fresh strawberries won't be "freshlike" after freezing - they get darker and a bit mushy, but they are awesome for smoothies and I like to put them in my ice cream (homemade mint chocolate chip is what I have now!).

We have fresh frozen grapes, blueberries, raspberries, cherries, mango, peaches and blackberries. In the fall its: pumpkin, apples. I puree most of these fall items for pies and baking. A few years ago i froze watermelon slush. It was really yummy around christmas as a ice pop.
