Salsa,Salami,Spinach,Squash,Salmon,Stuffing,Sugar Snap Peas,Sour Cream,Sweet n Sour,Steak,Sprouts,Shrimp.....Spaghetti,Subs,Sandw ich...


Here we go.......

Spaghetti and Meatballs(my favorite!!!)

MEATBALLS

1 pound lean ground beef
1/2 pund ground sausage(hot OR sweet)
1 cup fresh bread crumbs
1 tablespoon dried parsley
1 tablespoon grated Parmesan cheese
1/4 teaspoon ground black pepper
1/8 teaspoon garlic powder
1 egg, beaten

SAUCE
3/4 cup chopped onion
5 cloves garlic, minced
1/4 cup olive oil
2 (28 ounce) cans whole peeled tomatoes
2 teaspoons salt
1 teaspoon white sugar
1 bay leaf
1 (6 ounce) can tomato paste
3/4 teaspoon dried basil
1/2 teaspoon ground black pepper



Mix beef,sausage, bread crumbs, parsley, Parmesan, 1/4 tsp pepper, garlic powder and beaten egg. Mix well and form into 12 balls. Store, covered, in refrigerator until needed. (or you can freeze at this point)

Over med heat, saute onion and garlic in olive oil til onion is translucent. Stir in tomatoes, salt, sugar and bay leaf. Cover, reduce heat to low, and simmer 90 minutes. Stir in tomato paste, basil, 1/2 teaspoon pepper and meatballs and simmer 30 minutes more. Serve.

CP Salmon Bake
~~~~~~~~~~
2 15 oz cans salmon,boned and skinned
4 c bread crumbs
2 tsp lemon juice
1 can tomatoes
1 chopped green bell pepper
1 can cream of onion soup
1 can cream of celery soup
4 well beaten eggs
1 1/4 tsp garlic powder
1 tsp old bay
2 chicken bouillon cubes, crushed
1/4 c 1/2 and 1/2

Grease crock pot liner. Combine all ingredients except celery soup and 1/2 and 1/2. Pour into crock pot. Cover and cook on low heat for approximately 5 hours.

Combine cream of celery soup with 1/2 and 1/2 and heat in saucepan. Use as a sauce for salmon bake.

Spicy Spaghetti Squash
~~~~~~~~~~~~~~~
1 small spaghetti squash, halved and seeded
1 Tbs olive oil
1/2 c minced onion
3 cloves garlic, minced
2 green onions, minced
12 oz ground white meat turkey
2 c crushed tomatoes
2 Tbs red wine
2 tsp capers
2 tsp minced fresh oregano
2 tsp crushed red pepper flakes
2 Tbs chopped fresh parsley

Preheat oven to 350 .

Place each squash half cut side down on a cookie sheet and bake uncovered for about 45 to 60 min,til a fork goes easily into the shell. Allow to cool and scoop out the strands of squash with a large spoon and set aside.

Heat the oil in a skillet over med-high heat.
Add the onion, garlic and scallions and saute for 2 minutes. Add the turkey and cook for 4 minutes. Add the tomatoes and wine and bring to a boil, lower the heat and simmer 20min.
Add the capers, oregano, red pepper flakes and parsley; simmer for 5 min.
If the squash has cooled too much, reheat it in the microwave, covered for 2 to 3 minutes. Top the squash with the sauce and serve.

1 3/4 c sugar
1 c water
2 packages kool aid


Mix sugar and water. Bring to a boil, and boil for about 1 minute. Remove from heat, and stir in kool aid.

Let cool and pour over shaved ice.....How's that for a frugal summer snack??

2 to 3 med sweet poatoes (1 1/2 C mashed)
1 stick REAL unsalted butter
1/2 C sugar
2TBS milk or half and half
1tsp salt
3-1/4 to 3-1/2 C all purpose flour
4-1/2 tsp baking powder

Bake potatoes until soft about 45 min at 400 degrees. They will cook faster if you prick them and put them in aluminum foil in the oven. While potatoes are warm measure 1-1/2 cup of pulp into a large bowl. Add butter, sugar, milk, and salt, mix well.

Sift flour and baking powder, add to sweet potatoe mixture. Work lightly with hands to make a soft dough. Do not knead!! Shape dough into a flatened ball. Cover in plastic and chill. Dough can be made a day early to this point.

Do not overwork the dough because it will keep it from rising!!

Preheat oven to 400 and place in the upper portion of the oven. Lightly grease a cookie sheet and place biscuits closely bake 15 to 20 minutes or until brown.

1 large can of salmon remove bones or two small cans boneless and skinless
1 can condensed mushroom soup
2 slices of bread made into bread crumbs
1 med onion (or less)
2 eggs
3TBS of milk
salt and pepper to taste

You can add carrots, squash or any other veggies you like at the point.

Mix together all ingredients

Bake at 350 for 45 to 1 hour

My mom always served this with a cheese sauce she made. I prefer it without.

this is an AWESOME recipe!!!!I can't believe I haven't already posted it

1/2 c sugar
1 Tbs butter
1 1/2 c packed brown sugar
1 egg
1 tsp baking soda
1 c sour cream
1/2 c chopped walnuts
1 tsp cinnamon
1/2 c shortening
2 c flour
1/2 tsp salt
2 c chopped rhubarb


Preheat oven to 350
Grease and flour 13x9.

Mix sugar, nuts, melted butter and cinnamon,til crumbly,set aside.

Cream together brown sugar, shortening and egg.

Add flour, soda and salt to creamed mix,alternately w/sour cream.

Stir in rhubarb.

Pour into pan,sprinkle w/topping.

Bake 35-45 mins.


*NOTE*
I do tend to double the topping part and I add a GOOD 2 c rhubarb

2 loaves bread dough, thawed
3/4 lb. pepperoni
1 lb. mozzarella cheese, grated
1/2 c. Parmesan, grated
1 tsp. garlic powder
1 tsp. dried basil
1 tsp. oregano
1 T. olive oil
2 eggs

-Brush dough with olive oil. Roll 1 loaf of dough out to 14x11 inch rectangle shape.
-Mix garlic powder, basil, oregano together. Sprinkle 1/2 of spices onto 1 rolled out loaf.
-Place pepperoni on crosswisw rows on dough. Sprinkle 1/2 of the cheese on and roll like a jellyroll fashion.
-Turn seam side down on a baking sheet. Brush with egg.
-Repeat this process with the other loaf.

*Can be prepared 1 week ahead. Wrap tightly and freeze. Thaw before baking.
*Bake at 400 degrees until golden brown.

1 angel food cake (either bought or prepared)
1 (4 1/2 oz.) box chocolate pudding (instant)
1 (12 oz.) Cool Whip
1 1/2 c. milk

-Slice cake top off about 1-2 inches down (save).
-Tunnel out the center all the way around.
-Mix pudding and milk, fold in about 4 oz. Cool Whip.
-Put pudding mixture in tunnel.
-Replace the top. Frost with Cool Whip.
-Chill and keep refrigerated.
*Can add pieces of cake pulled out of the tunnel to the pudding mixture before placing in tunnel.
